Tips And Techniques

Don’t over-mix! Because that will yield tough waffles with an odd rubbery texture. Mix until all ingredients are just combined. A few lumps are totally normal.

Grease the waffle iron– Because this prevents the waffles from sticking and ripping apart when you remove them from the iron.

Ingredients

Instructions 

  • In a large mixing bowl, whisk together flour, baking powder, sugar until combined.
  • Add eggs, butter, milk, vanilla extract, lemon extract, lemon zest and mix until just combined. Don't over-mix! There will be some lumps.
  • Gently fold in the blueberries.
  • Spray waffle maker with nonstick cooking spray.
  • Pour batter in waffle iron. The amount of batter should be determined, based on your waffle iron instructions. 
  • Close and cook for about 4 minutes or until waffles are golden brown and slightly crispy along the edges. Cook time will vary, based on your waffle iron instructions.
  • Remove waffles from waffle iron onto a plate.
  • Sprinkle some more blueberries on top along with some maple syrup. Enjoy!
