    How to Make Crepes {Easy Crepe Recipe}

    The best, quick and easy crepes recipe, homemade with simple ingredients. Buttery, thin, soft and can be served as sweet or savory with variety of fillings! Also known as French crepes!

    The best thing about them is that no special crepe maker, machine or pan is required, just like these Chocolate Crepes. You just need a blender and a nonstick pan. Also, this recipe never fails and is dummy-proof! My mom has been making these for me since I was a kid and I still request them, when I visit her. It's made with a handful of ingredients that you already have in your pantry: flour, eggs, vanilla, sugar, butter, milk.

    What is a crepe? What is it made of?

    It's a very thin pancake and served with sweet or savory fillings. Typically, it's served for breakfast but can also be enjoyed as dessert.

    What is the difference between a pancake and a crepe?

    Pancake batter has raising agents in it, such as baking powder or baking soda or both, which causes it to to be thick and fluffy, when cooked. However, crepe batter does not have these raising agents and therefore, they are thinner and flatter.

    How to make crepes?

    • Prepare batter- Mix together milk, eggs, vanilla, butter, flour, sugar in a blender and blend until mixture is smooth.
    • Let it rest- Batter should rest for at least 30 minutes because it reduces the air bubbles.
    • Cook- Light spray a nonstick pan, pour batter and swirl pan around to spread out the batter. Cook until golden brown, then flip, cook the other side, remove from pan.
    • Fill- Add your favorite fillings and toppings.
    • Enjoy! Tastes best when served immediately. Can be served warm or cold. Leftovers can also be refrigerated or frozen to be enjoyed later.

    Howe to make crepes with pancake mix?

    Prepare the pancake batter, as per the box instructions. Then, mix in water or milk to thin out the batter so that it's easy to swirl in the pan.

    How to fold crepes?

    There are a few different methods:

    1. Fold in half: This is super easy. Just fold it in half into a semi-circle.
    2. Make triangles: This is a more fancy presentation and often seen at restaurants. Fold in half and then fold in half again.
    3. Make rolls: Fold from one side to the other in the shape of a burrito.

    Crepe filling

    A sweet cream cheese filling is a very popular choice, like this Best Cream Cheese Frosting or if you like chocolate, try this Chocolate Cream Cheese Frosting. However, you can get super creative and try some of these other delicious ideas:

    • Fruits- Such as strawberry, raspberry, blackberry, blueberry, peaches, bananas.
    • Chocolate- Such as chocolate syrup, fudge sauce, ganache. These specific toppings are especially awesome on chocolate crepes or cocoa crepes.
    • Chocolate chips- Semisweet, milk, dark or while all taste good.
    • Candy bars- Roughly chop them up and sprinkled them on top.
    • Homemade whipped cream
    • Lemon curd
    • Pie fillings- Such as Raspberry Pie Filling or Peach Pie Filling or Strawberry Pie Filling or Blueberry Pie Filling.
    • Caramel sauce
    • Dulce de Leche
    • Nutella- Or Nutella syrup. Nutella strawberry crepes are a a very popular flavor combination served at many breakfast joints.
    • Peanut butter- Or any other nut butter you like. Heat it in the microwave for a few seconds to make it easier to drizzle or spread.
    • Cookie butter- Biscoff is the best!
    • Jams and preserves- Such as Homemade Strawberry Jam.
    • Frostings- Such as Mango Frosting or Strawberry Buttercream Frosting or Lemon Frosting.
    • Nuts and dried fruits- Chop them up roughly.
    • Sweetened cream cheese or mascarpone- Just mix in some powdered sugar.
    • Maple syrup- Get the best quality you can find.
    • Honey- Not the same as corn syrup!
    • Powdered sugar- Just a light dusting on top is enough.

    Variations

    • Savory crepes- These would make great breakfast crepes and also make a dinner or "brinner." Serve them with flavored cream cheese, shredded cheese, bacon, ham, sausage, mushroom, shredded chicken, scrambled eggs and even roasted vegetables.
    • Sweet dessert crepes- A "crepe cake" is very popular in this category and it's made with stacked layers and various creamy, fruity fillings.

    Tips and Techniques

    • Can you freeze crepes? Yes! Once they cool down completely, layer them between sheets of wax paper and store them in a sealed airtight container for up to 1 month. When you are ready to enjoy them, let them thaw at room temperature for about 30 minutes or in the fridge overnight.
    • Stacking them- If you are stacking them, be sure to line a sheet of wax paper between each layer to prevent them from sticking together.
    • Batter must rest- This is not an optional step! The resting period allows the bubbles to be reduced in the mixture, which helps to create the best texture.
    • Don't over-mix batter- Because that will make them very tough and chewy. Batter is ready when it's just combined and smooth and typically takes about 15 seconds in the blender.
    • Use unsalted butter- Because this prevents the recipe from becoming too salty. Also, don't replace butter with oil since the small amount of butter adds a subtle but rich flavor.
    • You must use all-purpose flour- No other flour has given me the same results and I have tried a variety of them!

    Ingredients
      

    • 2 cups Milk 2% or Whole
    • 4 Eggs Large
    • 1 teaspoon Vanilla extract
    • 3 tablespoon Butter Unsalted, Melted
    • 1.5 cups All-purpose flour Sifted
    • 1 tablespoon Granulated sugar

    Instructions
     

    • In a blender, add milk, eggs, vanilla, butter, flour, sugar and blend on low speed until mixture is smooth (Takes about 15 seconds).
    • Cover and chill batter in the fridge for 30 minutes or overnight. 
    • Heat a nonstick pan (Dimensions: 8 inch) over medium heat and spray oil.
    • Pour ¼ cup batter in the pan and immediately, start tilting and swirling the pan to evenly coat the pan with batter into a circle.  
    • Cook until bottom is golden brown. The, flip it over and cook the other side for a few seconds until golden brown. 
    • Remove from heat and do the same with the rest of the batter until you have a stack. 
    • Fill them with fresh fruits, Nutella, jams and preserved and any other toppings you like. Enjoy!

    Notes

    • Read all my tips above.
    • Leftovers can be stored in a sealed container in the fridge for up to 2 days. 
    • Layer the crepes with sheets of wax paper between them to prevent them from sticking together.
