I am a sucker for handwritten letters, which inspired me to make these cakes. I find actual love letters so sweet and personal but, in this day and age, emails have replaced them, *sigh*. Seriously, I don't find anything romantic about reading emails! By the way, remember these Valentine's Day Cookies (Love Letter Cookies)? Today's treats are inspired by that same design.These mini cakes would be so great to serve on Anniversaries and Valentine's day or they can even be used as Wedding party favors. These are also so much fun to make with kids because you get to see their creativity shine through. These cakes are just as stunning as this Rosette Cake (Buttercream) and this Chocolate Marshmallow Cake (Heart Cake).

How to Make Love Letter Cake Recipe From Scratch?
- Bake and cool cakes- Cut in half and fill with icing.
- Cut into small cakes- Using a sharp knife to make even rectangles.

Use different decor- I kept the decoration very simple and used red and pink heart sprinkles but you can also try using stamps.

Tips and Techniques
Where to buy fondant? You can easily order online from Amazon or Wilton or you can also buy it from Wal-Mart, Hobby Lobby or Michaels.
Cool cake completely before icing- Because this prevents the icing from melting and sliding right off the cake.
Chill the cake for 1 hour before cutting- Because this makes it so much easier to slice the cake.
Roll out fondant and place the cake jam side down on top to attach the fondant- Because this makes it so much easier to cut the fondant to the exact size of the mini cakes.
Make sure to use a sharp knife- Because this ensures clean lines are cut on the cake and fondant, resulting in the best visual appeal.
Storage of Homemade Mini Cakes
Room temperature- Sore in a covered box away from heat and moisture for 1-2 hours.
Refrigerate– In a covered box for up to 3 days day but please note that fondant decorations may become sticky from the moisture in the refrigerator.
Freeze– Decorated cakes cannot be frozen because when they thaw, the fondant decorations become sticky due to condensation.

Ingredients
- 2 Chocolate cake Round, 8 inch
- 1 cup White chocolate buttercream frosting
- ½ cup Easy homemade strawberry jam
- ¼ cup Heart sprinkles Pink or red
- 1 cup Marshmallow fondant White
Instructions
- Bake the chocolate cakes and allow it to cool down.
- Cut it in half and fill it with buttercream icing.
- Then, use a sharp knife to cut small even sized rectangular pieces.
- Tip: Chilling the cake for an hour really makes slicing easier.
- Spread a thin coating of seedless strawberry jam on top each rectangular cake piece.
- Roll out white fondant and place the jam-side down onto the fondant.
- Cut off excess fondant around the cake with a knife.
- Gently press the knife on top of the fondant to indent all the envelope details.
- Stick a small heart sprinkle in the center, using a dab of frosting. Enjoy!
