This mixture is one of those things that I really disliked as a kid but now that my palette has developed, I can't get enough of it and can sprinkle it on everything. This is now a crucial ingredient for me when it comes to Fall baking, especially when making Baked Apple Cider Donuts (Cake) or sprinkling on top of these Easy Pumpkin Pancakes (With Pumpkin Puree).

Key ingredients
- Ground cinnamon- The higher quality, the better the mixture will taste.
- Granulated sugar- This is your regular table sugar, not to be confused with powdered sugar.

Variations
- Pumpkin pie spice- Instead of ground cinnamon, use your favorite brand of pumpkin pie spice to bring in a nice Fall flavor.
- Apple pie spice- Brings in an old classic taste to your recipes.
- Other individual ground spices- Such as cardamom, nutmeg, or cloves.
- Lavender- This will bring in a whole new dimension.
- Vanilla- Bring in extra warmth with some vanilla extract.
- Orange- Use orange extract for a new flavor profile.

Tips and techniques
- Be sure to label it- Otherwise you may get it confused with another spice in your cupboard.
- Mix thoroughly- You want to be sure the two ingredients are completely combined so you don't have pockets of just sugar or just cinnamon.
- Double the recipe- This is so easy to do and making it ahead makes life easier in the future.
- Afraid you won't use it all in time?- Simply half the recipe. That's easy, too.
- Be aware that there are different kinds of cinnamon- Saigon cinnamon, for example, has a stronger flavor so you may need to reduce the amount.
- Add a bit of salt- To counteract the sweetness factor.
Storage
- Make a head- This can definitely be made in advance. In fact it can last up to 3 months in your cupboard.
- Room temperature- This can be stored in a sealed jar or container for up to 3 months.
- Refrigerate- I don't recommend this. The moisture in the refrigerator can make this mixture sticky.
- Freeze- I don't recommend this since, again, the moisture will make it sticky.
