I have been working on this recipe since last Summer but every time I made it, something was wrong. After many tweaks, this recipe is now perfect. It is soft, moist but still firm. It's not too dense like a pound cake but not too airy like a chiffon cake either. My husband couldn't even tell there were avocados in this recipe. These are just as delicious as my Avocado Cookies (With Chocolate Chips) and Fudgy Avocado Brownies.

- I don't think this cake needs any frosting- But a light dusting of powdered sugar on top can never hurt.

- Omit the chocolate swirls altogether- And just make a simple vanilla cake or you can flavor it with lemon or lime zest for a Summer dessert.
- Shaped cake- Many people enjoy making this into an avocado shape. You can even make it cute by making it look like a real or cartoon Kawaii avocado.
- Use for birthday celebrations- This makes an easy and delicious cake for special occasions. Add some sprinkles, candles, and make it personal for the individual. You can even make Homemade Sprinkles if you want to go the extra mile.

How to make easy avocado cake recipe from scratch?

1. Prepare the wet mixture- By mixing together avocado puree, coconut oil, and sugar. Then add eggs, buttermilk, and vanilla.

2. In a separate bowl- Whisk flour, baking powder, baking soda. Then combine with wet mixture.

3. Scoop out ¾ cup of batter- And place in a separate bowl. Split the remainder of the batter into two loaf pans.

4. In bowl with remaining batter- Mix in cocoa powder, sugar, and milk to make chocolate batter.

5. Pour spoonfuls of chocolate batter- Into regular cake batter in the pans and swirl.

6. Bake- Until inserted toothpick comes out clean. Cool and enjoy.
Tips and techniques
- Both, baking powder and baking soda are required- For the perfect texture. Don't omit one or replace one with the other.
- Don't replace buttermilk with regular milk- Since buttermilk adds moisture.
- Use ripe avocados- For maximum richness and creaminess.
- Don't replace cake flour- With any other flour since it creates the best tender cake texture.
- Make sure all the ingredients are at room temperature- So that they blend together smoothly.
- Don't over-mix batter- Because this will yield a tough textured cake.
- Puree the avocado- Into a very smooth mixture because if it's not smooth, there will be lumps in the batter.
- Prepare your pans- Line with parchment paper of grease and flour them very well to prevent cakes from sticking to the pan.
- Make marbled look- By using a butterknife or toothpick to swirl the two colored batters together.
- Cool cake before decorating- If you decide to add powdered sugar, frosting, or any other decoration be sure the cake is completely cool so that it doesn't make a gooey mess.
- For neat slices- Cut cake when it is fully cooled and with a sharp knife.

Recipe FAQs
You can make your own buttermilk by using 1 cup of milk and 1 Tb of vinegar. Let sit a minute, mix, and add to batter.
This happens when you over-mix the batter. It is okay to have a few lumps.
This is likely due to avocados that are not ripe enough. When they are ripe, the batter will be smooth and creamy. It may also be that you didn't puree the avocados before adding.
Sometimes the chocolate batter is a bit thicker and that makes it hard to make a marbled effect. To fix this, simply add milk a little bit at a time to reach a desired consistency.

Ingredients
Avocado cake batter
- 1 Avocado Ripe, Pureed into a smooth paste without lumps
- 2 tablespoon Coconut oil Melted
- 1 cup Granulated sugar
- 2 Eggs Large, Room temperature
- 1 cup Buttermilk
- 1 tablespoon Vanilla extract
- 2¼ cups Cake flour
- 1½ teaspoon Baking powder
- 1 teaspoon Baking soda
Chocolate batter for "marbling" effect
- ¾ cup Avocado cake batter Remove this amount from the cake batter you just made
- 3 tablespoon Cocoa powder
- 3 tablespoon Granulated sugar
- 4 tablespoon Milk More or less may be needed to make the batter smooth
Instructions
- In a mixing bowl, add the avocado puree, coconut oil, sugar and mix everything until smooth.
- Add eggs, buttermilk and vanilla extract and mix until smooth.
- In a separate bowl, whisk together the flour, baking powder, and baking soda.
- Dump this dry mixture into the wet mixture and mix until just combined. Your avocado batter is ready.
- Scoop out ¾ cup of the batter you just made into another bowl.
- Add cocoa powder, sugar and milk and mix until just combined. Your chocolate avocado cake batter is ready.
- Now, divide the original avocado cake batter into 2 loaf pans (Dimensions: 8x3). Spread the batter evenly with a spatula.
- Pour spoonfuls of the chocolate avocado cake batter that you just made on top of the cakes and use a toothpick or butter knife to create a marbling effect.
- Bake at 350 degrees F for 40-45 minutes or until an inserted toothpick in the center comes out clean.
- Cool to room temperature and enjoy.
Notes
- Don't over mix batter because that will yield a tough and gummy cake.
- Use ripe avocados for maximum richness and creaminess.
- Coconut oil can be replaced with any neutral oil of your choice.
- Make sure all ingredients are at room temperature to allow for even and smooth blending.

Made this cake yesterday and my kids loved it! They didn't realised that there's avocado in them until my older boy said, there's something inside.... He loves avocado. Hubby didn't really enjoy a not so airy cake, too bad for him! And since Ii can't find evaporated milk and we dont do fat free, I used semi skimmed milk and it turned out great. Although I have to say, I can still taste the eggs which somewhat slightly. Is that normal? Would make this again but in chocolate perhaps?

Oh and Gina...you said you used 1 big pan. I use 2 pans (9x3) when making this cake. So, i am not sure how using 1 pan would affect the cake or the baking time....

Hey Gina,
I don't think using homo milk was the problem...it shouldn't really have affected it.
But yes, this cake really needs the 4 tsp of baking powder, not 2 and 1 avocado is more than enough. Using 2 would affect the texture of this cake considerably and may make it too moist to the extent that it doesn't taste good.
So, try out the recipe without any changes and see how it goes....it should work
