    It's weird how I can spend hours making a cake but when it comes to pies, I just want them to be effortless like this Easy Pecan Pie Recipe or these Chocolate Pecan Pie Bars and today's simple recipe makes the list too. It's packed with layers upon layers of deliciousness. The bottom starts off with a graham cracker crust, which is then topped off with a rich and creamy yogurt cream cheese filling and that's topped off with fresh apples, caramel sauce and chocolate chips.

    Key ingredients for best spiced no bake apple pie

    • Cream cheese- Use full fat for best results.
    • Yogurt- Be sure it is full fat Greek yogurt.
    • Granulated sugar- Versatile and used in a wide range of baked treats.
    • Spices- These include cinnamon powder, nutmeg, allspice.
    • Cool Whip- Use full fat to get all the creamy texture.
    • Mini graham cracker crust- Pre-made crusts make for an easy dish.
    • Apples- Both Granny Smith and Red apple are used.
    • Mini chocolate chips- Simply placed as a sweet decoration.
    • Caramel sauce- Used as a delicious drizzle on top.

    Variations

    Omit spices- And mix 1 tablespoon of this Crockpot Apple Butter instead.

    Top it off- With Chantilly Cream, if you like, prior to serving. Another option is Dulce de Leche.

    Go big or go home- Instead of mini pies, you can make one big 8 inch pie.

    Chocolate fruit combination- Replace caramel sauce with Hot Fudge Sauce (Chocolate Fudge Sauce).

    Add a no bake crumble topping- By mixing together some almond flour, shredded coconut, finely chopped pecans, maple syrup, coconut oil or butter. It should be a thick crumbly mixture. This adds a lovely crunch in each bite.

    Use this spiced cheesecake filling as a topping- On Apple Nachos or this this Easy Apple Cobbler.

    Use salted caramel sauce- Because the sweet and salty flavor combination is incredible.

    Top it off- With some roughly chopped pecans for additional crunch and flavor.

    Fresh apple alternative- Use these instead: Sauteed Cinnamon Apples or Slow Cooker Fried Apples.

    How to make mini easy caramel apple pie recipe?

    1. Mix together- Cream cheese, whipped cream, sugar, and yogurt.
    2. Fill- Mini pie crusts with this mixture.
    3. Top off- With apples and chocolate chips.
    4. Drizzle- Caramel sauce and enjoy!

    Tips and techniques 

    • Use store-bought pie crusts or homemade- Both work equally well. I recommend this Homemade Graham Cracker Crust if you decide to make yours from scratch.
    • Homemade or store-bought caramel sauce can be used- Just make sure it's not a very thin syrup which will just drip everywhere and become sticky and messy.
    • The amount of sugar can be adjusted- Based on your personal preference.
    • Since apples brown as they get older- Top these mini pies with fresh apples just prior to serving.
    • Don't use regular yogurt- Because the consistency is thinner. Instead, use full fat Greek yogurt, which is thicker.
    • Use Cool Whip or the homemade version- This time I used Cool Whip, which was just so convenient, especially during this busy time of the year. But I always know that my Homemade Whipped cream recipe will be there when I have the time to make it.
    • Use full fat ingredients- For maximum creaminess.
    • Use a variety of apples- To get the best flavor profile.

    How do you thicken a runny no bake pie filling?

    Mix in some more powdered sugar or some cornstarch or even some meringue powder to thicken it to a desirable consistency.

    What are the best apples to use in desserts?

    Use a variety for best flavor profile such as Granny Smith for tartness and Red or Fuji for sweetness.

    Storage

    • Room temperature- Don't leave out for more than 1-2 hours or else it can go bad.
    • Fridge- Leftovers can be stored in a sealed container in the fridge for up to 2 days. 
    • Freezer- This is not recommended, because the dairy will separate upon thawing.

    Ingredients
      

    • 1 cup Cream cheese Full fat
    • ¾ cup Greek apple pie yogurt Or vanilla Greek yogurt
    • ¼ cup Granulated sugar
    • ¼ teaspoon Cinnamon powder
    • ¼ teaspoon Nutmeg
    • ¼ teaspoon Allspice
    • 1 container Cool Whip 8 oz. container, Full fat
    • 6 Mini graham cracker pie crusts Pre-made
    • 1 Granny Smith apple Washed, Cut into small pieces
    • 1 Red apple Washed, Cut into small pieces
    • ¼ cup Mini chocolate chips For decoration
    • 1 cup Caramel sauce For drizzling

    Instructions
     

    • In a mixing bowl, mix together cream cheese, yogurt, sugar, cinnamon, nutmeg, allspice until combined and creamy.
    • Mix in Cool Whip gently until mixture is smooth.
    • Spread this cheesecake filling in pre-made mini graham cracker pie crusts.
    • Top it off with red and green apples and some mini chocolate chips. 
    • Drizzle caramel sauce and enjoy. 

    Notes

    • Leftovers can be stored in a sealed container in the fridge for up to 2 days.

      When I make this, I think I might lie about how easy it was. Or maybe I will make a chocolate cookie crust on my own and then lie about how easy the rest was.
