    I love using avocados in desserts because they add so much moisture and once fully baked, you don't even taste them. Don't believe me? Try it out for yourself or make my Avocado Cake or these Avocado Cookies. All of these recipes took a lot of trials and errors to get them just right but it was well worth the effort.

    Even my kiddo likes them and he's a fussy eater! Compared to my other brownies and bars, this dessert is "healthier." That's because there is no butter, shortening or margarine and that fat is replaced with ripe mashed avocados. I also reduced some of the granulated sugar and replaced it with coconut sugar.

    Key ingredients for fudgy brownies

    • Avocado- They must be ripe for best flavor and texture.
    • Sugar- You need both granulated and coconut sugar (or brown sugar).
    • Eggs- Be sure they are large and at room temperature.
    • Vanilla- This complements the chocolate with warm undertones.
    • Chocolate chips- These will be melted and added directly into the batter.
    • Flour- Use all-purpose for best results in this recipe.
    • Protein powder- Use your favorite unflavored option.
    • Cocoa powder- The higher the quality, the better the brownies.

    Variations

    • Stir in your favorite nuts- Like chopped pecans, walnuts, or peanuts to the brownie batter, prior to baking, to add a little crunch.
    • When the brownies cool down completely- Top them off with Coconut Cream Chocolate Frosting to really enhance the chocolate flavor. You can also use other flavor frostings, such as Marshmallow Frosting, Easy Funfetti Frosting, Best Cream Cheese Frosting, Caramel Frosting, or Mint Frosting.
    • Stir in some more chocolate chips- You can use milk, semisweet, white, or dark to the brownie batter, prior to baking, to make them even more ooey gooey.
    • For a gluten free flourless version- Use a gluten free flour blend. Bob's Red Mill 1 to 1 baking flour works really well as a substitute for all-purpose flour.
    • Sea salt brownies- Before baking, sprinkle a little sea salt on the top.
    • Place a dollop- Of Whipped Cream, Cool Whip, or Chocolate Whipped Cream on top of each brownie.
    • Dust the top- With powdered sugar or cocoa powder.
    • Drizzle- Caramel Sauce, Nutella Syrup, or Chocolate Ganache on top.
    • Try other extracts- Like almond extract, mint extract, or maple extract to change up the flavor profile a bit.
    • Mexican chocolate brownies- Add in some cinnamon and chili powder, according to your personal preference. If you like these, you will also enjoy my Mexican Hot Chocolate Cookies and Mexican Chocolate Cake.

    How to make easy chocolate avocado brownies recipe from scratch?

    1. Cream together- Avocados and sugars (Image 1, 2).
    2. Mix in- Eggs, vanilla extract, and melted chocolate (Image 3, 4).
    3. Add in- Flour and cocoa powder, mix until smooth (Image 5, 6).
    4. Bake- Until done and let cool (Image 7).
    5. Cut into slices- And enjoy (image 8).

    Tips and techniques

    • All ingredients must be at room temperature- So that they blend together smoothly.
    • The melted chocolate cannot be too hot- Or else it will start cooking the eggs.
    • Protein powder is optional- But I highly recommend it because there is no harm in sneaking a little nutrition into desserts.
    • Sugar options- I use a combination of granulated sugar and coconut sugar but you can also use all granulated sugar or a combination of granulated sugar and brown sugar.
    • Don't replace sugar with honey or molasses- Because that will change the flavor and texture of these brownies.
    • Don't use whole wheat flour- Because it gives these brownies an odd "chunky" texture.
    • Make sure avocados are mashed very well- And there are no large chunks so that they blend together evenly into the brownie batter.
    • Use ripe avocados- Because this will make moist brownies that yield the best flavor and texture.
    • Don't over-mix the batter- Because that will yield very tough brownies. It's okay if there are a few lumps in the batter.
    • Line baking pan with foil- And lightly grease it with oil to make it easier to remove brownies after baking.
    • Use a plastic knife to cut brownies- They prevent tears and make smooth, even cuts.
    • To know when brownies are done baking- Insert a toothpick in the middle and if it comes out clean they are fully cooked. Just be careful not to over-bake.

    Recipe FAQs

    Why are my brownies dry and crumbly?

    It is likely you over-baked them, so be sure to watch the cook time and use a toothpick to check the center. Using avocados that are not ripe enough can also contribute to a drier brownie.

    Why didn't my brownies set? Why are they raw in the middle?

    You needed to cook them longer. You will know they are done when an inserted toothpick comes out clean. Also, be sure to measure all ingredients correctly.

    Why are my brownies tough and chewy?

    This happens when you over-mix the batter. Just remember it is okay to have a few lumps.

    Storage

    • Room temperature- These can be covered and left on the counter for 3-5 hours.
    • Refrigerate- Store in a sealed container for up to 3 days. 
    • Freeze- Store in a sealed container for up to 1 month.
    • Make ahead- Make them a few days a head of time and keep in the fridge in a sealed container for up to 3 days. You can also keep them in a sealed container in the freezer up to 1 month before you need them. Simply thaw in the fridge before serving. You can even warm them up in the microwave for 10 seconds to serve warm and gooey.

    Ingredients
      

    • 2 Avocados Ripe, Mashed
    • ½ cup Granulated sugar
    • ½ cup Coconut sugar Or brown sugar
    • 4 Eggs Large, Room temperature
    • 1 teaspoon Vanilla extract
    • 1.5 cups Chocolate chips Semisweet, Melted but not too hot
    • ½ cup All-purpose flour
    • 1 packet Vital Proteins Collegen Peptides Can be replaced with 1 tablespoon protein powder
    • ¼ cup Cocoa powder

    Instructions
     

    • In a mixing bowl, cream together mashed avocados, granulated sugar and coconut sugar until creamy. 
    • Add eggs and vanilla extract and mix until smooth. 
    • Add melted chocolate chips and mix until smooth.
    • Add flour, protein powder and cocoa powder and mix until just combined. 
    • Using a spatula, spread batter in a square pan (Dimension: 8x8), lined with foil and lightly greased with oil. 
    • Bake at 350 degrees F for about 25 minutes or until an inserted toothpick in the center comes out clean. 
    • Let it cool completely before slicing into square pieces. Enjoy!

    • Coconut sugar can be replaced with brown sugar.

      This recipe turned out SO good! Now other brownie options seem lacking!

      I added my collagen and protein powders.

      I also made a batch for my friend and I to share, as she is going through a lot and recovering from cancer, so I added an Irish Whiskey Cream to it too... Sooooo yum!

      The contrast of a sprinkling of sea salt on tip was really nice, too.
