    I made this chocolate layer cake for family and friends on my last trip to Canada. Everyone loved it and it and we had no leftovers! Since I didn't have any of my cake supplies with me on my trip, I worked with what I had: fresh fruits and lots of candy bars! This recipe is so easy for beginners and requires no fancy tools. Additionally, If you don't have time to bake a cake from scratch, you can use a box cake mix or pre-made store-bought iced cake.     How To Make Easy Kit Kat Cake Recipe From Scratch?

    1. Bake cakes- Allow them to cool fully.
    2. Frost cakes- With buttercream icing.
    3. Stick Kit Kats- They should completely cover the sides.
    4. Tie a ribbon around it- To hold the candy bars together.
    5. Arrange the fresh fruits- On top of the cake.

    Key Ingredients

    • Cake- Preferably round in shape but can be any shape you like. It can also be any flavor you like.
    • Frosting- I used chocolate buttercream.
    • Kit Kats- Make sure you have the correct quantity to fully cover the sides.
    • Berries- These should be fresh, washed, patted dry.

    Variations

    • Use other candies- You can use different chocolate bars like Twix, Snickers, Twizzlers, Milky Way or Mars bars.
    • Add m&ms- Instead of berries, use m&m candies to top the cake.
    • Make an Easter version- Replace berries with Easter egg candies. You can also replace regular Kit Kats with the seasonal pastel colored ones that are only available for a limited time in Spring.
    • Make a Halloween version- Replace strawberries with just blackberries. They are dark and spooky. If you want to use candies, consider using orange and yellow Reese's pieces.
    • Make a birthday version- Fill the top with colorful sprinkles and lots of other small candies.
    • Use white chocolate Kit Kats- Instead of the milk chocolate ones I used.
    • Make an ice cream version- Instead of a simple chocolate cake, make this Ice Cream Cake and then decorate as per instructions below.
    • Use a different flavor cake– Such as this Easy Cherry Cake or Funfetti Cake.
    • Try different frosting recipes– Such as White Chocolate Buttercream Frosting or American Buttercream Frosting Recipe.
    • Add a filling- Such as Strawberry Pie Filling or this Easy Chocolate Ganache.
    • Consider a different cake shape– I made circle cakes, but you can bake a square or rectangle cake if you like.
    • Make a tiered cake- These would be great for weddings or other large formal events. Don't forget to use dowels or bubble tea straws for support or else the top tier will dig into the bottom tier.

    Tips and techniques

    • Don’t frost or decorate warm cakes- Because the warmth will cause the icing and chocolate bars to melt and make a sticky mess.
    • Level the cakes- Slice off the dome on the cakes before stacking them for an even and flat surface to add toppings.
    • Cut your strawberries lengthwise and dry them- Place them on a paper towel so that all those juices can get absorbed. The last thing you need is drippy strawberries. It can make your cake so soft and “mushy.” Wash and pat dry the blackberries too.
    • Do not use frozen berries- Because they release too much juice upon thawing.
    • If you are not using a cake stand- Make sure your cake is sitting on a very sturdy cake board because this cake will get heavy.
    • What size cake pans to use? I recommend 2 round 8x2 pans for this recipe. You can use alternate sizes, but may need more batter if they are larger.
    • How to know cakes are done baking? Insert a toothpick in the center and if it comes out clean, they are ready to be removed from the oven.
    • Don't skip the ribbon- It really helps to stabilize the cake so that the candy bars don't slide, slip, or fall off.

    How Many Kit Kats Does it Take to go Around a Cake?

    There are 40 singles or about 11-12 regular sized bars (with 4 singles each) on this 8 inch cake per the recipe below. The total number will vary based on the size and shape of the cake you make. I recommend buying extras in case you break some along the way.

    Storage

    • Refrigerate- Since this cake is covered in fruits, I highly advise you to keep it in the refrigerator until you are ready to serve. Leftovers can be stored in a sealed container in the fridge for up to 3 days.
    • Freeze- Unfrosted cakes and frosting can be stored in sealed containers for up to 1 month. When you are ready to enjoy it, let everything thaw in the fridge overnight and then, decorate as per instructions below.

    Ingredients
      

    • 2 Chocolate cakes Round, 8x2 each
    • 4 cups Chocolate buttercream frosting
    • 25-30 Strawberries Washed and sliced in half
    • 15 Blackberries washed
    • 3-4 Mint leaves Fresh
    • 40 Kit Kats

    Instructions
     

    • Bake 2 round chocolate cakes. Let them cool down and then cut off the dome.
    • Place one cake on a cake stand and frost the top with chocolate buttercream icing.
    • Then, place the other cake on top of the icing and press gently so the two cakes stick together.
    • Frost your entire cake in chocolate buttercream icing.
    • Unwrap all of your Kit-Kat bars and start sticking them around your cake. The frosting acts like glue.
    • To hold all the Kit-Kats in place, tie two ribbons around them for extra support. 
    • Wash your strawberries and blackberries and pat them dry with a paper towel.
    • Cut your strawberries lengthwise and place them on a paper towel so that all those juices can get absorbed. The last thing you need is drippy strawberries… it can make your cake so soft and “mushy.”
    • Arrange the strawberries in a circular pattern on top of the cake. Place the blackberries in the center. Top it all off with few mint leaves. Enjoy!

    • In the video tutorial, I tried something different and arranged the strawberries in an alternate position. I also used one ribbon instead of the two that you see in the pictures. Either way works well and looks nice. 
    • Use a sturdy cake stand or cake board since this cake will get heavy.
    • Since this cake is covered in fruits, keep it refrigerated until you are ready to serve.

      Fab cake. What are the silver balls stuck to the ribbon - are they pins holding it in place? Were they tricky to get through the kitkat?

      No, they are not pins. I don't think adding pins in a cake is safe. When i bought this roll of ribbon, it already had silver beads on them.

      I love your cakes and cookies! I agree that making pretty food is THE most creative outlet out there;it affects people on so many levels.
      I do an occasional cake, but not as often as I used to.I owned a bakery, but I have done more for family and friends.I do more fancy cookies any more...fun, aren't they?
      I thought of posting on cakes, but I'm concentrating on helping people feel confident in hosting and I wouldn't want to intimidate them...yours certainly would be intimidating to someone who can't ice a cake,I can tell you!
