    How To Make Applesauce Muffins Recipe From Scratch?

    1. Add ingredients in bowl- This includes butter, eggs, applesauce, granulated sugar, brown sugar, vanilla extract, flour, cinnamon, nutmeg, baking powder, baking soda.
    2. Mix- Until just combined.
    3. Pour batter- In lined cupcake pan.
    4. Bake- Until tops are golden brown.
    5. Cool muffins- For 10 minutes and then enjoy.

    Why did my muffins sink in the middle?

    This means they were not done cooking yet and were removed from the oven. The muffins needed to be baked longer. You will know they are done when a toothpick inserted into the center comes out clean, and the tops are golden brown.

    Variations

    • Applesauce oatmeal muffins- Add 1-2 tablespoon rolled oats (not quick oats) in the batter for a subtle chewy texture.
    • Banana applesauce muffins- You can use this Banana Muffins recipe as the base and reduce the amount of sugar with applesauce so it doesn't become overly sweet. Another option is to reduce the quantity of applesauce in this recipe and replace it with some mashed ripe banana.
    • Add a sugar topping- While the muffins are still warm, brush tops with melted unsalted butter and sprinkle cinnamon sugar.
    • Add a sparkling sugar topping- The sparkling sugar is a larger crystal than granulated sugar and will give a beautiful look and crunchy texture on top of the muffins. They need to be added just prior to baking.
    • Try other extracts- Such as bourbon, maple, or almond extract.
    • Mix in some nuts- Such as almonds, pecans, walnuts, or cashews. They should be finely chopped to prevent them from sinking to bottom.
    • Add some shredded carrots- For additional sweetness and texture.
    • Make mini muffins- Use a mini muffin tray. Keep an eye on these, because the baking time will be shorter than normal sized muffins.
    • Make jumbo muffins- Use a jumbo muffin tin. Be aware that the baking time will vary and take longer than the regular muffins.
    • Add chocolate chips- Fold in dark, milk, white chocolate, or even butterscotch chips for added sweetness. They should be mini sized to keep them from sinking to bottom.
    • Top them off- With peanut butter or any other nut butter or Easy Homemade Strawberry Jam or Powdered Sugar Glaze or even this Easy Chocolate Ganache. I love it with a smear of this Crockpot Pumpkin Butter and this Crockpot Apple Butter.

    Tips And Techniques For Apple Muffins

    • Use unsalted butter- Because this prevents them from becoming too salty.
    • Use unsweetened applesauce- Because this will prevent them from becoming too sweet.
    • Adjust amount of extracts- Add more or less cinnamon and nutmeg, based on your preference.
    • Why are my muffins soggy? Either the ratio of liquid to dry ingredients is too off and there was too much liquid, or the muffins were not baked long enough.
    • Butter vs. Oil- Butter adds so much more flavor and richness, while oil only adds moisture. Stick with butter for this recipe.
    • Don’t over-mix- Because that can yield very tough and dense muffins.
    • Both, baking powder and baking soda are required– One cannot be replaced with the other, and neither can be left out.
    • Liner vs. No liner- Many people prefer to just oil the pan and omit the liners but this is entirely up to you.
    • Let muffins cool- They must cool completely before you dig in. If you peel the liners while the muffins are warm, they will fall apart.

    Storage

    • Refrigerate- Leftovers can be stored in a sealed container in the fridge for up to 3 days. 
    • Freeze- Store in an airtight container for up to 1 month, then thaw to room temperature and enjoy.

    Ingredients
      

    • ½ cup Butter Unsalted, Melted
    • 2 Eggs Large
    • 1 cup Applesauce Unsweetened
    • ½ cup Granulated sugar
    • ¼ cup Brown sugar
    • 2 teaspoon Vanilla extract
    • 2 cups All-purpose flour
    • 2 teaspoon Cinnamon powder
    • ½ teaspoon Nutmeg powder
    • 1.5 teaspoon Baking powder
    • ½ teaspoon Baking soda

    Instructions
     

    • In a large mixing bowl, add butter, eggs, applesauce, granulated sugar, brown sugar, vanilla extract and mix until combined.
    • In another mixing bowl, whisk together flour, cinnamon, nutmeg, baking powder, baking soda until combined. You can also mix in 1 tablespoon rolled oats, if you like.
    • Add this dry mixture into the wet mixture and mix until just combined. Don't over mix! It's okay if there are some lumps.
    • Pour batter in a cupcake pan, lined with cupcake liners.
    • Bake at 375 degrees F for 20-25 minutes or until an inserted toothpick in the center comes out clean and tops are golden brown.
    • Remove from oven and let muffins cool for about 10 minutes and then remove from pan. Enjoy!

      I made these today and they were amazing! Not too sweet for a morning muffin. I added in the rolled oats because I have a massive amount of them. I also used my unsweetened homemade applesauce I made earlier in the week specifically with apple muffins in mind. So yummy! Thanks for the recipe!       These muffins were good! Next time will use 1/2 oil with half of melted butter, nuts, more cinnamon and streusel topping.4 stars
