    These taste incredible with your morning coffee. Fall is all about enjoying spiced treats like these Cinnamon Cookies and Cinnamon French Toast and these Fluffy Cinnamon Pancakes and of course these Cinnamon French Toast Sticks. There is something about warm spices and their wonderful aroma that's just so comforting this time of the year.

    Key ingredients for cinnamon sugar muffins

    • Flour- I like to use ingredients that are typically already in your pantry, such as an all-purpose flour.
    • Sugar- White granulated sugar brings the best results.
    • Baking powder- Used as a rising agent for the muffins.
    • Egg- Use a large one at room temperature for better mixing.
    • Butter- Be sure it is unsalted and melted for this recipe.
    • Buttermilk- Adds so much moisture.
    • Vanilla extract- A simple and classic ingredient, but adds a yummy flavor and aroma.
    • Cinnamon- This really takes them over the top.

    Variations

    • Streusel muffins- Add a crumble topping, prior to baking for a subtle crunch.
    • Spiced apple version- Add ¼ cup finely chopped apples in the batter.
    • Add pumpkin puree- If you happen to have some leftover from another recipe simply mix in 1 tablespoon pumpkin puree. It won't taste anything like my Pumpkin Muffins but there will be just a subtle hint of pumpkin in each bite.
    • Serve with- Sliced bananas or fresh berries and maple syrup on top.
    • Stir in some mini chocolate chips- In the batter, similar to what I did in these Chocolate Chip Muffins. You can also drizzle Hot Chocolate Fudge Sauce on top.
    • Use a mini muffin pan- To make smaller sizes. Please note that the baking time will be shorter.
    • Omit the sugar coating- And frost the tops with Maple Frosting, Marshmallow Frosting, Caramel Frosting, Brown Sugar Frosting. or even Peanut Butter Frosting.
    • Enhance the "spice"- In these muffins by adding some nutmeg and allspice, too.
    • Instead of coating in cinnamon sugar- Spread some Crockpot Pumpkin Butter or Crockpot Apple Butter on top.
    • Serve alongside- Sauteed Cinnamon Apples or Caramelized Bananas.
    • Replace butter with coconut oil- If you like a hint of coconut flavor and aroma, which I personally love!
    • Drizzle- Caramel Sauce or Dulce De Leche on top if you prefer ooey gooey muffins.

    How to make easy cinnamon muffins recipe from scratch?

    1. Whisk together dry ingredients- This includes flour, sugar, and baking powder. Set aside (Image 1).
    2. Mix together wet ingredients- This includes egg, butter, buttermilk, vanilla extract, and cinnamon powder (Image 2).
    3. Pour wet mixture into the dry mixture- And mix until combined (Image 3 and 4).
    4. Pour in muffin pan- And bake until tops are golden brown (Image 5).
    5. Let them cool- Until they are at room temperature.
    6. Coat them- In melted butter (Image 6).
    7. Roll them- In cinnamon sugar (Image 7 and 8).

    Tips and techniques

    • Use unsalted butter- Or else the muffins will become very salty.
    • Use only buttermilk- Because it makes these muffins very moist. Don't omit it or replace it with other types of milk.
    • Homemade buttermilk- This can be made by mixing together 1 cup whole milk with 1 tablespoon lemon juice or vinegar. When mixture curdles, mix and it's ready to use.
    • You must use all-purpose flour- For the best texture. Whole wheat flour makes the muffins very dense and heavy.
    • Allow the muffins to cool completely- Before coating them in butter and sugar because if they are hot, the sugar will start melting and it will become very sticky and messy.
    • Granulated sugar can be replaced with brown sugar- And that will not affect the flavor or texture at all. However, it will affect the appearance and make the muffins a bit darker in color, which I don't find appealing.
    • Make your own cinnamon sugar- This is something I always have on hand for sprinkling on top of waffles, pancakes and even crepes. Make it by mixing together 1-1.5 teaspoon ground cinnamon in 1 cup granulated sugar.
    • Fully coat- In the cinnamon sugar to really pack in that spiced flavor and sugary crunch.

    What is the secret to moist muffins?

    Buttermilk is key to the softest muffins you will ever eat. It's acidic and reacts with the leavening agents to create the best fluffy texture.

    Are muffins better with oil or butter?

    This depends on the recipe. Generally, using oil creates a light and soft texture. Using butter creates a slightly denser texture but it has a higher fat content and definitely more flavor.

    How do you know muffins are done baking?

    Insert a toothpick or wooden skewer in the center of a muffin. If it comes out clean, it's done and remove from oven immediately.

    Storage

    • Room temperature- Place in an airtight container after cooled to keep from getting dry, but don't leave out more than 1 day.
    • Refrigerate- Tastes best when served fresh but leftovers can be stored in a sealed container in the fridge for up to 2 days. 
    • Freeze- Don't coat the muffins and store them in an airtight container for up to 1 month. When you are ready to enjoy them, thaw to room temperature, coat them in butter and cinnamon sugar and dig in.

    Ingredients
      

    • 1 cup All-purpose flour
    • 3.5 tablespoon Granulated sugar
    • 1.5 teaspoon Baking powder
    • 1 Egg Large
    • 3 tablespoon Butter Unsalted, Melted
    • ⅔ cup Buttermilk
    • 1 teaspoon Vanilla extract
    • ½ teaspoon Cinnamon powder

    Cinnamon topping/ Coating

    • 1 cup Granulated Sugar
    • 1-1.5 teaspoon Cinnamon powder Adjust based on your preference
    • ½ cup Butter Unsalted, Melted

    Instructions
     

    • In a mixing bowl, whisk together the flour, sugar and baking powder. Keep this dry mixture aside. 
    • In another mixing bowl, whisk together add egg, butter, buttermilk, vanilla extract, cinnamon powder. 
    • Pour wet mixture into the dry mixture and mix until just combined. Don't over-mix!
    • Pour batter in a lightly greased cupcake pan, about halfway through. 
    • Bake at 350 degrees F for about 15 minutes or until an inserted toothpick in the center comes out clean. 
    • Allow the muffins to cool down. 
    • While muffins are cooling, mix together sugar and cinnamon powder in a small bowl.
    • Brush each muffin with melted butter and then, roll them in cinnamon sugar. Enjoy!
