Tips and techniques
Don’t decorate warm cupcakes- They must cool completely before they are decorated or else the icing will slide and decorations will become sticky.
Homemade marshmallow fondant vs. Store-bought fondant- Either can be used. Both have their pros and cons. Homemade version tastes better but store-bought version is convenient because it's already pre-colored.
Flower drying time may vary- This depends on the humidity. Higher humidity = Longer drying time.
Use gel colors rather than liquid food colors- Because they are thicker and more concentrated and won't alter the consistency of icing or fondant.
Can I use gum paste? Yes. Please note that it dries hard very quickly and fondant takes longer.
Storage
Refrigerate-This is not recommended since the moisture from the fridge can make the fondant decorations sticky. However, you can store iced cupcakes in a covered box in the fridge. Stick the fondant flowers on top before serving. That being said, leftovers can be stored in a sealed container in the fridge for up to 3 days but fondant decorations may become sticky.
Room temperature- Decorated cupcakes can be stored in in a covered cardboard box for up to 2 days as long as there are no perishable fillings. They should not be in a sealed container because that will cause the fondant decorations to become sticky.
Freeze- Unfrosted/ undecorated cupcakes and frosting can be frozen separately in sealed containers for up to 1 month and thawed overnight in the fridge. Once thawed, they can be decorated, as per instructions below.
Make ahead instructions- These cupcakes can be baked and decorated 1 day in advance.
How to store fondant flowers? Once they are completely dry and hard, store them in a cardboard box away from humidity, moisture and sunlight. They can last up to 6 months.

Ingredients
- 14 Lemon cupcakes
- 3 cups Lemon frosting
- 2 cups Marshmallow fondant White, yellow
- ½ cup Green sprinkles
Instructions
- Bake cupcakes and allow them to cool completely.
- Ice each cupcake smoothly with lemon icing.
- Toss green sprinkles and keep aside.
- Start off by dusting your work surface with powdered sugar. This will prevent the fondant from sticking to the surface. Now, make a small ball of yellow fondant.
- Roll out white fondant.
- Use a large daisy cutter to cut out a piece.
- Press the toothpick gently at the middle of each petal to give it a veined pattern.
- Roll out yellow fondant.
- Use a small circle cutter to cut out a piece.
- Press the end of a toothpick on this circle horizontally and then vertically until you have a "criss-cross" pattern within the circle.
- Brush some water at the center of the daisy.
- Place the yellow circle in the center and press it with your fingers until it sticks into place.
- If you want a simple flower with not too many petals, you can stop here but, if you want a more full flower, keep going.
- Roll out white fondant and cut out another white flower.
- Brush some water in the center.
- Place the prepared daisy with the yellow center on top of this one. Press it gently until everything sticks together.
- If you like flat flowers (like the ones in my pictures), let them dry on a flat sheet of wax paper. If you want the petals to look more curved, place these flowers on a flower forming cup and let them dry overnight.
- Place a flower on top of the each iced cupcake. Enjoy!
Notes
- Read all my tips above.
