Easy Cake Mix Gingerbread Cookies

These easy cake mix gingerbread cookies are made with just 3 ingredients. No chilling required and great for making cut out shapes.

’Tis the season for making easy cake mix gingerbread cookies! 😛

These are seriously the easiest gingerbread cookies ever and made with just THREE ingredients: Spiced cake mix + Butter + Egg.


A couple of years ago, the cake mix makers decided to REDUCE the quantity of cake mix powder in each box from 18.25 ounces to 15.25 ounces.

That MESSED UP my Mom’s cake mix cookie recipe, which was creating a wet sticky mess now.

After LOTS of trial and error, I have come up with the the perfect recipe for CUT OUT cake mix gingerbread men cookies… Woohoo!

This NO FAIL recipe requires NO chilling and is perfect for impatient people like me 😉

Please note these cookies are NOT ideal for making gingerbread houses since they can’t handle the weight of all the candies.

These easy cake mix gingerbread cookies are made with just 3 ingredients. No chilling required and great for making cut out shapes

  • 1 package Spiced cake mix box 15.25 oz
  • ½ cup Butter Unsalted
  • 1 Egg Large
  • 1 cup Royal icing Or melted chocolate for decoration
  • 1/2 cup Mini m&m candies For decoration


  1. Add the egg and butter in a mixing bowl and mix until thoroughly combined.
  2. Sift the boxed cake mix flour.
  3. Add the cake mix flour into the wet mixture and mix until just combined. Don’t over mix.
  4. Roll the dough between two sheets of wax paper and use your cutters to cut out various shapes.
  5. Bake at 350 degrees for 6-8 minutes or until the edges are slightly brown.
  6. Allow the cookies to cool down and then decorate them with royal icing/ melted chocolate and candies. Enjoy!

Recipe Notes

– Sift the boxed cake mix flour at least once to get rid of the little lumps or else your baked cookies will have little specks of cake mix flour… yuck!

– The batter will become crumbly. Don’t add any type of liquid to thin it out! Just use your hands to gently knead the dough.

– Don’t use an egg at room temperature. Use a cold, refrigerated egg. Don’t ask me why but it just works! Using an egg at room temperature will make the dough too soft.

– The butter should be at room temperature but not melted!

– If you live in an area, where the weather is hot, you may need to chill the dough for 40 minutes so that it becomes more manageable.

– You can apply this same recipe to any cake mix and make any flavor of cut out cookie dough.

  1. How many cookies does it make? I have a class of Kindergarten kids. I cannot find the easy gingerbread mix. Thank you.

    • Oh this is so easy and kiddos love it. The number of cookies you get will depend on the size of your cookie cutter and the thickness of your cookies. I usually 10-12 decent sized gingerbread cookies and some smaller ones.
