Easy Pumpkin Donuts

You need just 3 ingredients to make these easy pumpkin donuts and one of them is cake mix! These soft and spiced donuts are perfect for Fall/ Thanksgiving!

I have been hooked on these easy pumpkin donuts for the last few weeks, having it for breakfast, snack and even dessert…lol.

Weird thing is that up until two years ago, I WASN’T very fond of using pumpkin in my baking.

But then, my friend made these pumpkin donuts for me and I was surprised by how good they tasted!

Honest to goodness, they were the most DELICIOUS donuts I have ever eaten and the COOLEST thing was that she made them using a DOCTORED cake mix recipe.

They are made with just THREE ingredients:

1)Yellow cake mix box

2)Spices

3) A can of pumpkin puree

I JAZZED them up by first glazing them and then topping them off with melted dark chocolate and caramelized popcorn.

These donuts are SOFT and CAKE-LIKE.

They have a spicy CINNAMON flavor, which is perfect for this time of the year.

The caramelized popcorns add a nice CRUNCH and pouring chocolate on anything is NEVER a bad idea…lol.

easy pumpkin donuts 3To make these easy pumpkin donuts, you will need the following ingredients:

Donuts:
1 box yellow cake mix
1 can pumpkin puree (15 ounces)
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger powder
1/4 tsp cloves powder
1/4 tsp allspice powder

Glaze:

1 1/2 cups powdered sugar
1/4 cup unsalted butter
3 tbsp milk
1 tsp vanilla extract

Toppings:
1 cup melted chocolate
1- 2 cups caramelized popcorn

Notes:


– If you have pumpkin pie spice on hand, omit all the spices in this recipe and use 1 tbsp of pumpkin pie spice instead.
– Instead of glazing these donuts, you can just cover them in powdered sugar OR brush some melted butter on top of them and just dip them in cinnamon sugar OR just top them with melted chocolate. There are so many creative options!

And here are the steps:

Step 1:
In a deep mixing bowl, add the cake mix powder, all the spices and pumpkin puree.

Step 2:
Mix until everything is thoroughly combined.

Step 3:

Spoon out this into a greased donut pan.

Tip:

Since the batter is thick and difficult to pour into a pan, I suggest filling a piping bag with the batter and then piping it into the donut pan holes.

Step 4:
Bake the donuts at 350 degrees for about 10-12 minutes or until an inserted toothpick comes out clean.

Step 5:

While the donuts are baking, prepare the glaze…
In a mixing bowl, add the powdered sugar, butter, vanilla extract and milk.
Mix until everything is thoroughly combined.

Step 6:

Dip the top of warm donuts in this glaze.
Allow excess glaze to drip back into the bowl.

Step 7:
Place the donuts on the cooling rack to set and cool down.

Step 8:

When the donuts have cooled down, pour some melted chocolate on top of each donut and toss some caramelized popcorn.

And you are done!

      You should really try pumpkin donuts… I am not too fond of pumpkins in general but I like them in desserts. They are just the perfect Fall treat!
