Why is my crumble not crispy? How to fix a soggy crumble? Serve it immediately! When it comes out fresh from the oven, the topping is the crispiest. Let it cool at room temperature and don’t cover it with anything because that will make it soggy.
Why is my crumble dry? Oftentimes, this means the ingredients were not measured properly. Not enough liquid/butter/ fresh fruits were added. Use measuring cups and measuring spoons. Another reason for dry crumble is over-baking. If it’s over-baked, all the moisture and juices evaporate and thus, dries up the dessert.
Don't use bananas that are too ripe- Make sure the bananas are ripe, but if they are too ripe they will be mushy and it will fall apart.
Use unsalted butter- Because it prevents the dessert from becoming too salty.
Should my topping mix be dry and crumbly? Yes. Do not add any liquid. That’s what makes it so crispy and crunchy at the end. Too much liquid makes a soggy crumble.
How do you know when the crumble is done baking? The top will become golden brown and fruit juices and sugar will be bubbling.
Storage
Refrigerate– In a sealed container for 2-3 days.
Freeze– I do not recommend freezing because the crisp on top will become soft and “mushy” when thawed.

Ingredients
Banana Filling
- 2 tablespoon Butter Unsalted
- ½ cup Brown sugar
- ¼ teaspoon Cinnamon powder
- ¼ cup Apple juice Or any other fruit juice of your choice
- 1 teaspoon Vanilla extract
- 5 Bananas Cut into big chunks
Crumble Topping
- ¾ cup Old-fashioned oats Cannot be replaced with quick oats
- ½ cup All-purpose flour
- ⅓ cup Brown sugar
- ½ cup Butter Cold, Unsalted, Cut into cubes
- 1 teaspoon Cinnamon powder
- 1 teaspoon Vanilla extract
- ½ cup Pecans Or walnuts, Roughly chopped
Garnish/Topping
- 1 cup Whipped cream Or vanilla ice cream
Instructions
- Prepare the banana filling by heating butter in a nonstick saucepan over medium heat.
- Add brown sugar, cinnamon powder and mix until sugar dissolves completely.
- Add apple juice, vanilla extract and cook for 1-2 minutes or until mixture thickens a bit.
- Remove from heat and pour this sugar mixture in an oven-safe rectangle baking dish (Dimensions: 7x11 or 8x12).
- Add banana chunks and mix them gently so they are coated in the sugar mixture.
- Spread them out evenly in the dish. Keep aside.
- Prepare the topping by mixing together oats, flour, brown sugar, butter, cinnamon powder, vanilla extract in a large bowl. Use a pastry cutter or a large fork to cut the butter into the flour/oat mixture until you have a crumbly mixture. Do not add milk or water to thin it out.
- Stir in chopped pecans.
- Spread this mixture on top of the banana filling evenly.
- Bake at 350 degrees F for 20-25 minutes or until topping is golden brown.
- Remove from oven and let it cool for about 15 minutes.
- Then, serve with whipped cream.
