    We make this every Christmas morning and both, kids and adults love it. It's very simple to make. If you are crazy about eggnog like me, you really need to make these Eggnog Cookies (Soft and Chewy) and this Eggnog Cheesecake (No Bake). Also, if you my leftover Eggnog Latte, you can even use that in this delicious recipe.

    Key ingredients

    • Eggnog- Use your favorite brand.
    • Eggs- You need 5 large ones.
    • Rum extract- Gives that iconic flavor while still kid-friendly.
    • Nutmeg powder- Brings in that warm, classic aroma.
    • Toast or french bread- Uses about 12 slices.
    • Syrup- To drizzle on top.
    • Butter- Use full fat for best results.

    Variations

    • For a sweet and salty flavor combination- Top it off with crispy bacon bits.
    • Overnight french toast casserole/baked version- Use thick slices of challah bread and 8 eggs, then double the rest of the ingredients. Additionally, pour in ½ cup whole or 2% milk. To make, combine eggs, eggnog, milk, rum extract, and nutmeg. Pour this over a buttered baking dish (Dimensions: 9x13), lined with slices of challah bread. Cover and refrigerate for up to 8 hours. In the morning, bake at 350 degrees for 45- 50 minutes or until golden brown. Sprinkle powdered sugar and nutmeg on top, prior to serving with maple syrup.
    • Waffle version- Use your favorite waffle recipe and replace milk with the same quantity of eggnog and add ½ teaspoon rum extract and ¼ teaspoon ground nutmeg. My family and friends love this just as much as these Lemon Blueberry Waffles (Fresh or Frozen). For an elevated presentation that would be suitable for a brunch event, turn the waffles into a showstopper Waffle Cake.
    • Make pancakes- Use your favorite pancake recipe and replace milk with the same quantity of eggnog and add ½ teaspoon rum extract and ¼ teaspoon ground nutmeg.
    • Add pumpkin puree- During the Fall season for a little more warmth.
    • Slice it up into sticks- For a fun version that is great for kids.

    How do you make eggnog french toast?

    1. Combine together- Eggs, eggnog, milk, rum extract, and nutmeg.
    2. Dip slices- Of bread in this mixture.
    3. Cook on a griddle- Or a nonstick pan until golden brown on both sides.
    4. Top off with butter- And syrup then enjoy.

    Tips and techniques

    • Use thick slices of bread- Like french bread, brioche, or challah because they absorb the eggnog mixture well without becoming "mushy."
    • The amount of nutmeg and rum extract can be adjusted- Based on your preference.
    • If you don't have a griddle- Make these in a nonstick pan on stovetop.
    • Other topping options: Butter, maple syrup, powdered sugar, ground cinnamon or nutmeg, whipped cream, fresh berries, cranberry sauce, or even Sugared Cranberries.
    • Recipe can easily be doubled- To serve a bigger crowd.
    • Use room temperature ingredients- Because this helps everything mix together more smoothly.

    What bread should I use?

    French bread, Texas toast, brioche, or Challah is best, because it is thick and won't get so mushy.

    Does the crust need to be removed first?

    No. It really is a personal preference. You can keep it or toss it.

    Why is it soggy?

    This may have happened if you didn't use thick enough bread. It can also be that you left the bread in the mixture too long or didn't cook it long enough.

    Storage

    • Make ahead- You can prepare this beforehand and keep in the fridge for up to 2 days and reheat in the microwave, but fresh is best.
    • Room temperature- This can easily stay out in a covered container for 1-2 hours.
    • Refrigerate- In a sealed container for 2 days but truly tastes best when served fresh.
    • Freeze- This is not recommended because it doesn't taste as great upon thawing.

    Ingredients
      

    • 1.5 cups Eggnog
    • 5 Eggs Large
    • ½ teaspoon Rum extract
    • ¼ teaspoon Nutmeg powder
    • 12 Slices Toast Or slices of french bread
    • Syrup For drizzling on top
    • Butter For topping

    Instructions
     

    • In a wide/shallow baking dish, add eggnog, eggs, rum extract, nutmeg and whisk everything until smooth.
    • Dip each side of bread in this eggnog mixture and very gently, lift it and place it on a hot buttered griddle. 
    • Cook one side until golden brown. Then, flip it and cook the other side until golden brown. 
    • Top it off with thin slices of butter and maple syrup or pancake syrup.

    • Tastes best when served fresh but leftovers can be stored in the fridge for 24 hours.
