Every Christmas party needs this dessert. It's super creamy, sets perfectly and you don't even have to turn on your oven because it's no bake. It's also a great way to use up leftover eggnog after holiday parties. How to make no bake eggnog cheesecake recipe?
- Prepare the graham cracker crust and spread it at the bottom of a round pan.
- Prepare the filling by mixing together pudding mix, eggnog, cream cheese, powdered sugar, whipped cream.
- Spread this mixture on top of the crust.
- Chill.
- Top off with caramel sauce and nutmeg and you are done.
Tips and techniques for no bake eggnog pie
- You can use either homemade graham cracker crust or store-bought graham cracker crust. It can be easily found in the baking aisle.
- Use gel coloring to color the filling red and/or green to make it more festive for the holidays.
- Use full fat cream cheese and whipped cream for maximum creaminess.
- Caramel sauce on top is optional but looks pretty and compliments the cheesecake flavor very well.
- Use a cheesecake pan or a cheap round aluminum pie pan.
- You can either use alcoholic or non alcoholic eggnog.
- If you don't have homemade eggnog, use store-bought eggnog.
- You must chill this cheesecake because that allows the mixture to fully set.
- You can mix in some rum or some nutmeg and cinnamon in the mixture to enhance the flavor even further.
- Some brands of eggnogs are lighter in color and others have a yellow tinge. Also, white chocolate pudding (I used this!) has a lighter color than vanilla pudding, which also affects the color of the final cheesecake. Depending on that, the color of your cheesecake may be dull white or slightly yellow.
Variations
- Make this cheesecake in a rectangle pan instead of a round pan and cut square or rectangle slices to enjoy as cheesecake bars.
- Instead of a large cheesecake, you can make individual mini cheesecakes or mini tarts by using mini round pans.
- I used a classic graham cracker crust that you can buy or make at home. However, you can replace that with a gingersnap crust by using the recipe in this Pumpkin Cheesecake, where I used a spiced gingersnap crust. That would make this dessert even more perfect for Christmas!
- There are a few ways to incorporate chocolate flavor here. You can use a chocolate cookie crust or Oreo Pie Crust.You can also drizzle some semisweet on dark chocolate ganache on top, along with chocolate shavings or mini chocolate chips.
- This is a non-alcoholic cheesecake recipe but you can easily add a little rum, whiskey, bourbon or brandy and use that in this cake.
Cheesecake topping ideas
- Ground spices- Such as a light dusting of nutmeg or cinnamon.
- Caramel sauce- Or you can even try my Homemade Dulce De Leche, which is equally delicious.
- Whipped cream- Either spread a layer of this cream or just pipe swirls around the cake. You can also try Chantilly Cream which is similar.
- Semisweet or white chocolate ganache drizzle- Just drizzle on top.
- White chocolate shavings or chocolate chips- Sprinkle them on top of the cake.
- Eggnog glaze - Just drizzle on top.
Storage
- Refrigerate- In a sealed container for up to 3 days.
- Freeze- This is not recommended. It will not thaw well.
- Room temperature- Once set, this should not stay out for more than 2-3 hours.
- Make ahead- This can easily be made 1-2 days in advance and stored in the refrigerator.

Easy Eggnog Cheesecake Recipe

Ingredients
- 1 box Instant pudding mix Vanilla flavor or White chocolate, 3.4 oz
- 1.5 cups Eggnog
- 2 packages Cream cheese Full fat, 8 oz each
- ¼ cup Powdered sugar
- 1 cup Whipped cream E.g. Cool Whip, Full fat
- 1 Graham cracker crust
- ¼ teaspoon Ground nutmeg For sprinkling on top of cake
- ¼ cup Caramel sauce For drizzling on top of cake
Instructions
- In a large mixing bowl, add pudding mix and eggnog and mix until smooth.
- Add cream cheese, powdered sugar and whipped cream and mix until mixture is thick and fully combined.
- Spread this mixture on top of the prepared 8 inch round graham cracker crust.
- Chill for 3 hours or until set.
- Prior to serving, sprinkle a dash of nutmeg and drizzle some caramel sauce.
- Slice and enjoy.
