I love these Fudgy Brownies with Crackly Tops and I figured out a way to enjoy them in another form that I am sharing today. MY favorite part is that you can use a store-bought box which makes it so convenient. You can also try making my Brookies, which also start off with a brownie mix or bake these Caramel Brownies, which also have a brownie mix box base.

Key ingredients
- Brownie mix box- I know the sizes keep changing but for this recipe, you need an 18 oz. box. Ghiradelli is the correct size right now. If you can't find an 18 oz. box, you can use a weighing scale and use two boxes and measure out a total of 18oz.
- Butter- This should be unsalted and melted.
- Egg- Make sure they are large and at room temperature.
- Chocolate chips- I recommend using the mini size so you can enjoy them in each bite.
Variations
- Stuff them- Make my Buckeyes (Peanut Butter Balls Candy) and stuff these inside inside cookie dough balls and bake. Then, allow them to cool to room temperature and dip halfway in melted chocolate for an elegant look. You can also stuff with my Eggless Chocolate Chip Cookie Dough Truffles, if you prefer that flavor.
- Sprinkle some sea salt- On top of the cookie dough balls before baking. This leads to a lovely sweet and salty flavor profile.
- Try other chocolate chip flavors- Such as dark chocolate, white chocolate, milk chocolate, butterscotch, peanut butter and more. You can even use rainbow candy coated chocolate chips to make cosmic brownies.
- Make crinkle style cookies- This is done by rolling cookie dough balls in powdered sugar before baking.
- Try other add-ins- Such as chopped nuts like walnuts, pecans, peanuts, almonds. This adds a delicious crunch. You can also add chopped Oreos or candy bars or even caramel bits.
- Top with frosting- Once the cookies have cooled completely, spreads buttercream on top such as this Easy Mint Frosting, Peanut Butter Frosting, Maraschino Cherry Frosting, Sugar Cookie Frosting or this Marshmallow Frosting.
- Dip only tops of cookies in glaze- This really enhances the overall chocolate flavor. Use my Easy Chocolate Glaze Recipe (For Cakes and Donuts) which dries semi-hard.
- Make cookie sandwiches- Add your favorite scoop of ice cream between two cookies just like I did here with these Easy Ice Cream Sandwiches (Cake Mix). You can also try other fillings like Nutella, peanut butter, Biscoff cookie butter, jams and even Chocolate Ganache.
How to make easy brownie cookies recipe with brownie mix box?
- Mix ingredients- This includes brownie mix, melted butter and egg.
- Add chocolate chips- Stir these in but be very careful not to over-mix the dough.
- Chill-For 30 minutes
- Scoop and roll dough- Into small balls.
- Place onto cookie tray- Lined with parchment paper.
- Bake- Until cookie edges are firm and tops are crackly.
Tips and techniques
- Do not over-mix the dough- That's because mixing too much makes the cookies tough, dense and overly chewy.
- Use unsalted butter- Because having super salty cookies does not taste good.
- What brand of brownie mix should be used? Anything from Duncan Hines, Pillsbury, Ghirardelli, or Betty Crocker will all be successful. Just make sure the total quantity is 18 oz.
- Chilling the dough before baking is important- Because this will allow your cookies to hold their shape and not spread too much like a pancake in the oven.
- Use mini chocolate chips rather than regular sized ones- Because I feel like they spread more evenly in the dough.
- Use room temperature egg- Because it blends better and more smoothly with the other ingredients.

Ingredients
- 1 box Brownie mix 18 oz. box
- ⅓ cup Butter Unsalted, Melted
- 1 Egg Large, Room temperature
- ¼ cup Chocolate chips Mini size
Instructions
- In a large mixing bowl, add brownie mix, melted butter and egg and mix until just combined.
- Stir in chocolate chips.
- Cover and chill dough for 30 minutes in the refrigerator.
- Scoop small portions of dough and roll into balls.
- Place them on a cookie tray, lined with parchment paper.
- Bake at 350 degrees F for 8 to 10 minutes or until edges are firm and tops are crackly. Enjoy!

- Once cookies have cooled completely, dip halfway in melted chocolate or top with your favorite frosting.
- Try some add-ins like other flavors of chocolate chips, chopped nuts, Oreos, mini candies.
