Even if you are a novice baker, you can make today's recipe. It's great as a dessert, snack, breakfast or even brunch. It never fails and tastes delicious and kids can help too. This is just as great as my Christmas Gingerbread. It's also a great way to use up ripe bananas that are about to go bad. Check out these Ripe Banana Recipes for more inspiration.

Key ingredients
- Bananas- Make sure they are super ripe and mashed.
- Oil- Must be neutral tasting like canola, vegetable or corn.
- Eggs- Should be large and at room temperature.
- Cake mix- Use chocolate flavor or Devil's food cake.
- Chocolate chips- I like to use semisweet.
- Walnuts- Should be toasted and roughly chopped.
How to make easy chocolate banana bread recipe with cake mix?
- Mix wet ingredients in large bowl- This includes mashed bananas, oil and eggs.
- Add dry ingredients- This includes cake mix and chocolate chips.
- Pour batter- In two greased and floured loaf pans.
- Sprinkle- Mini chocolate chips and walnuts on top.
- Bake- Until an inserted toothpick in the center comes out clean.
Variations
- For a classic version, use yellow cake mix instead of chocolate cake and omit chocolate chips altogether. Check out this Easy Banana Bread (With Cake Mix).
- Transform this recipe into muffins- Pour batter in greased/floured muffin pan and bake at 350 degrees F for 18-20 minutes. Makes 12 muffins.
- Omit walnuts and drizzle melted peanut butter on top and toss crushed roasted peanuts.
- For a spiced Fall version, try this Pumpkin Banana Bread (With Cake Mix).
- Try other nuts and seeds like pecans, cashews, almonds, pistachios, pumpkin seeds, sunflower seeds.
- For a dose of triple chocolate, use chocolate cake mix, chocolate chips and top off with chocolate ganache or a drizzle of chocolate glaze.
- For a different flavor profile, stir in butterscotch chips or white chocolate chips instead of chocolate chips.
Tips and techniques for cake mix bread
- Chocolate cake mix or Devil's Food cake mix both work well. The brand of cake mix does not matter.
- Use semisweet or milk chocolate chips rather than dark chocolate chips because dark chocolate is very strong and overpowers all other flavors.
- Don't replace oil with butter because butter makes this bread too dense.
- Make sure to use the ripest bananas you can find because they add a lot of moisture and sweetness.
- You can either use 1 large loaf pan or 2 smaller loaf pans.
- Don't remove the loaves from the pan until they fully cool down or else they will crumble and fall apart.
- You can even freeze this to enjoy later. Once the loaves fully cool down, wrap them tightly in saran wrap and put them in sealed freezer bags for up to 1 month. Let them thaw at room temperature for 30-40 minutes and then cut slices with a sharp knife.
- Toppings are optional and can be omitted.
First of all, don't over-bake. The heat would dry the bread. Measure properly and don't eyeball anything because if you add too much flour, that would also lead to dryness and crumbliness. The moisture in this recipe comes from oil and ripe bananas but other key ingredients for making many desserts moist are: Oil (Especially coconut oil), Sour cream, Yogurt (Especially Greek yogurt), Butter and Applesauce.
Inaccurate measurements could be one reason. Another factor could be oven temperature. Don't ever open the oven door during baking because that causes hot air to escape and causes a massive drop in temperature.
The batter was over-mixed and led to the development of too much gluten. Always remember to mix until just combined, even if there are a few lumps left behind.
Storage
- Refrigerate- In a sealed container for up to 3 days.
- Freeze- In a sealed container or freezer bag for up to 1 month. Thaw in fridge overnight and enjoy.
- Room temperature- This can stay out in a covered container for 1 day.
- Make ahead- This can easily be made 1-2 days in advance,
