How to make homemade Indian mango lassi recipe from scratch?
- Add ingredients in blender- This includes mango pulp or puree, yogurt, milk, sugar, cardamom powder.
- Puree ingredients- Until smooth.
- Pour smoothie- In cups and serve chilled.
What is lassi?
It is an Indian drink that can be made thick and creamy like a smoothie while others may be salty and more watered down. It is most well-known as a simple yogurt drink made with spices, water or milk/buttermilk, yogurt, and sometimes fruit. Classic plain lassi is similar to this recipe and made without mangoes and made with just yogurt, milk and sweetener.
Fresh mangoes vs. Frozen mangoes vs. Mango pulp or puree
Any of the above can be used, depending on what you have on hand and what your local grocery store carries. Traditionally, ripe and super sweet fresh Alphonoso mangoes are used.
Lassi ingredients
Mangoes- Must be ripe and preferably Alphonso because they are the sweetest, but you can also use puree, pulp, fresh, or frozen mangoes.
Milk- Should be cold and preferably full fat for an extra rich and creamy flavor and texture.
Yogurt- Should be cold, full fat, plain (not vanilla flavored). I reccommend the Greek yogurt for this recipe, because of the extra rich, creamy, incredible taste.
Spices- Saffron and cardamom are the most commonly used spices in this drink, but you can get creative by using other spices and herbs, such as cinnamon or even mint.
Sweetener- Typically granulated sugar is used, but other options can be agave, monk fruit, honey, zero sugar sweeteners, or pure maple syrup.
Variations for lassi drink
Try other herbs and spices- Such as mint, basil, saffron, cinnamon, nutmeg, ginger, or even salt.
Add some extracts- Such as lemon, almond, mint, maple, or vanilla for subtle changes in flavor.
Make it dairy free- By using coconut milk or almond milk or soy milk. Just keep in mind it won't be as smooth and creamy.
Add some ice- On an extra hot day and make it more of a slushed out smoothie. Yum!
Try different yogurt- You can switch up the flavor, brand, or type of yogurt you use and see what flavors you can create.
Tips and techniques for mango yogurt drink
Use full fat ingredients- Because this makes the drink extra creamy, gives it a thicker texture, and tastes better overall.
Recipe can be doubled easily- Simply double all the ingredients for a bigger batch and make sure you have enough room in your blender and a party of guests.
Sweetness can be adjusted- This will heavily depend on how sweet your mangoes were to begin with. If they were unripe and tart, more sugar will need to be added, whereas if they were sweet, such as the Alphonso mangoes, you will likely need less.
Make it thinner by- By adding in more liquid like milk or water a little at a time until it reaches the desired consistency.
Make it thicker by- Adding in more fruit and some yogurt to get it to a thicker consistency you desire.
Storage
Fridge- Leftovers can be stored in the fridge for up to 2 days, but it might settle so mix with a spoon prior to serving.
Freezer- I don't recommend freezing because dairy can something separate upon thawing.
