St.Patrick’s day is incomplete without some leprechauns and that's why I made these adorable leprechaun cake pops! I am so glad I made these because they ended up looking ultra-cute. Keep in mind these leprechaun cake pops are heavy. Push them into a heavy duty styrofoam to prevent them from falling over. How to make easy St. Patrick’s day cake pops recipe from scratch?
- Bake and cool cake- Prepare frosting during this time.
- Make cake balls- Mix together the cake and frosting, and roll into balls.
- Add sticks- Push white chocolate coated sticks into cake balls.
- Chill- Prepare the wafer cone hats while chilling.
- Dip cake balls- In white chocolate individually.
- Allow chocolate to set- Push stick in a block of styrofoam.
- Assemble it- Add a hat, details, and face.

Green cake pops
This is the easiest St.Paddy's day dessert ever. Dip the cake balls in melted green chocolate and then roll them in green sprinkles, green sanding sugar, green colored shredded coconut, or other St. Paddy's day themed sprinkles.
Variations
- Make a girl leprechaun- Add eyelashes, and long hair instead of a beard!
- Try other cake flavors- Such as Chocolate Sheet Cake {With Cake Mix}, Yellow Sheet Cake {With Chocolate Frosting}, or this Funfetti Cake / Confetti Cake {From Scratch}.
- Pair with other frostings- Such as this American Buttercream Frosting Recipe, Marshmallow Frosting Recipe, or White Chocolate Buttercream Frosting.
- Make the hat out of something else- You can use rice krispie treats. Simply dye it green, and form it into the shape of a hat. You could also attach a Rolo candy to an Oreo cookie. Get creative!
Tips and techniques for leprechaun cake pops
- What are candy melts? They are colored and sometimes flavored candies meant to be melted and used as a coating on other treats.
- Go easy on the frosting- Because it’s easier to fix a dry mixture but impossible to fix a wet, mushy cake mixture. Add a little frosting at a time, then shape a ball or two to see if it holds it's shape.
- If you are going to color melted white chocolate- you cannot use gel food coloring and must use oil-based food coloring because otherwise the chocolate will seize!
- These pops are heavy- Because of this, they need a heavy duty styrofoam and support to keep them from tipping over.
- How many pops does this make? It truly depends on how big or small you make the cake balls.
- Use a small ice cream scooper to form them- Because this allows for uniform sizing of the cake pops. If you don't have one, you can use your hands or a measuring spoon to form the cake pops.
- Make sure to chill them- Because this helps them hold their shape when being dipped in the white chocolate, and then to set quickly as well.
Storage
- Make ahead instructions- You can make these 2 days ahead of time. Keep them in the fridge until you are ready to serve.
- Room temperature- In a covered box away from direct heat for 2-3 days.
- Refrigerate- In a sealed container for up to 3 days.
- Freeze- I do not recommend freezing these with the cone hats attached. They will become soggy upon thawing.

St.Patricks' Day Cake Pops (Leprechaun Cake Pops)

Ingredients
- 1 Carrot cake
- ¼-1/2 cup Cream cheese frosting
- 2 cups White chocolate Melted
- 10 Ice cream wafer cones
- 1 cup Green sanding sugar
- 2 cups Green candy melts Melted
- 1 cup Orange candy melts Melted
Instructions
- Bake cake and allow it to cool fully.
- While cake is baking and cooling, prepare the frosting.
- In a large mixing bowl, add cake, frosting and mix until you have a dough-like consistency which is moist and slightly crumbly.
- Start by adding a little frosting a (1 tablespoon at a time), while mixing. The amount of icing will depend on how moist your cake is. Typically, you need to add more icing to dry cakes and less icing to moist cakes.
- Use a small ice cream scooper or spoon out small portions of this mixture and roll into balls.
- Place them on a baking tray, lined with wax paper.
- Dip the tip of your lollipop sticks in melted white chocolate and push these coated sticks into cake balls.
- Chill in the refrigerator for 10 minutes.
- While those are chilling, prepare the wafer cone hats. Pour melted green chocolate on an upside down wafer cone. Before the chocolate has a chance to set, sprinkle green sanding sugar. Allow the chocolate to set at room temperature.
- Remove cake pops from the refrigerator and dip them in a bowl of melted white chocolate individually. Tap on the side of the bowl to remove excess chocolate.
- Push the sticks on a block of styrofoam and allow the chocolate to set at room temperature.
- Now, time to assemble it all together. Pour some melted white chocolate on top the cake pop. Stick your green wafer cone hat here. Hold it in place for a few seconds until secure.
- Add details to the hat with fondant or candies and stick them into place with melted chocolate.
- For the leprechaun's hair, beard and mustache, use melted orange chocolate that's been poured in a squeeze bottle. Create a rustic hairy pattern/design with the tip of your squeeze bottle, wherever necessary.
- For the eyes, you can use store-bought eyeball candies or use a large round or oval sprinkle and draw details on it with a black edible marker. Stick them into place with melted chocolate.
- For the nose, use a large round red sprinkle and stick it into place with melted chocolate and you are done. Enjoy.

- Store in a covered box away from direct heat at room temperature for 2-3 hours (because cream cheese icing was used and that can go bad quickly) or store in refrigerator for up to 3 days.
