    These little candies are something fun that my family makes during the holidays, probably as much as these Red Velvet Truffles and these White Chocolate Truffles. I have tweaked this recipe to make it even more creamy and the chocolate mint flavors are much more balanced now. Also, adding a little cream cheese helps cut down the sweetness.     Key ingredients for best mint chocolate chip truffles

    • Butter- Use unsalted at room temperature.
    • Cream cheese- Be sure it is full fat to get the creamiest, best texture.
    • Mint extract- This cannot be replaced with real mint.
    • Powdered sugar- Not to be confused with granulated sugar or it won't work out well.
    • Chocolate chips- Use mini instead of regular for best results.
    • Food coloring- This is optional but sure adds some fun.

    Variations

    • Dip them- In melted white chocolate or dark chocolate, semisweet chocolate, or even melted Andes mint chocolate.
    • Instead of mint extract and green food coloring- You can use whatever extract or gel coloring you like, I love to use orange extract to make orange truffles and I color them orange.
    • Coat them in cocoa powder- Or even powdered sugar is a cool idea like I did here with these Lemon Cake Balls (Cake Truffles).
    • Replace chocolate chips- With roughly chopped Oreos and that would make a delicious flavor combo, too. You can also try other chopped candy bars and cookies.
    • Stuff Hershey's Kisses in the center- Of each truffle for a fun surprise when people take a bite.
    • Substitute cream cheese- For a flavored cream cheese or other type of filling like Biscoff, peanut butter, Nutella, or even frostings, such as this Easy Mint Frosting or Marshmallow Frosting Recipe.
    • Roll them in toppings- This works especially well if you are dipping them in chocolate first. Before the chocolate is fully set, roll them in goodies such as Crushed Andes mints or candy bars, sprinkles, crushed Thin Mints or other cookies, crushed nuts, toffee, or crushed Chocolate Bark.

    How to make easy chocolate mint truffles recipe from scratch?

    1. Cream together- Butter, cream cheese, mint extract, and green coloring.
    2. Add powdered sugar- Gradually and stir in chocolate chips.
    3. Chill mixture- Then form into balls and enjoy!

    Tips and techniques

    • You must chill the mixture- For 1-2 hours so that it's easier to handle and form into the shape of small balls.
    • You must use unsalted butter- Becauise salted butter will make the truffle mixture very salty.
    • Use full fat cream cheese- If you use the fat free version the texture won't be as good and they won't be as creamy. Plus, it doesn't have the full flavor.
    • You can adjust the amount of mint extract- Based on your preference, but remember that too much extract will make them bitter.
    • The numbers of truffles you get will vary- Depending on how big or small you roll your truffle balls.
    • I highly recommend using gel food coloring- Because the colors are more vibrant and it's also a thick paste, which doesn't alter the consistency of the truffles.
    • I really don't recommend using fresh mint- Because it did not taste that good. There was a bitter aftertaste that was awful and the color wasn't as great as I was expecting.
    • Gradually add powdered sugar- One cup at a time while continuously mixing, because this will make it easier to stir in all the sugar and help make it smoother.
    • Wear disposable gloves- To form smooth balls and prevent the mixture from sticking to your hands. 
    • Be sure to use mini chocolate chips- Instead of the regular sized chocolate chips, because it makes them easier to roll into smooth balls and they are also easier to eat.
    • If covering in melted chocolate- If the ball is super cold and the melted chocolate is piping hot then the center will expand causing the ball to crack. Use dough balls that are not super cold and melted chocolate that's not super hot.

    What makes a candy a truffle?

    One thing that makes them a truffle is their shape. The balls resemble the fungi also called a truffle. Other things that make a candy a truffle include chocolate. Traditional truffles are usually covered in cocoa powder and have a rich chocolate ganache center.

    How to dip truffles in melted chocolate?

    Be sure the truffles are fully chilled and the melted chocolate is not too hot. Then I like to use a toothpick inserted into the truffle to then dip them in a bowl of melted chocolate.

    Why aren't my truffles setting? How to fix soft truffles?

    You may not have let them set in the fridge or freezer long enough in which case you just give it more time. Also be sure you measure ingredients accurately and if you are using melted chocolate be sure it is cooled first before dipping.

    Storage

    • Room temperature- Leftovers shouldn't be left out more than 2-3 hours because of the dairy products in them that need refrigeration. You also don't want them to get warm and melty.
    • Refrigerate- Leftovers can be stored in a sealed container in the fridge for up to 5 days. 
    • Freeze- Leftovers can be stored in a sealed container in the freezer for up to 1 month.
    • Make ahead- You can make this up to 5 days before needed and placed in a sealed container in the fridge. You can also make and freeze them in a sealed container for up to 1 month, then thaw before serving.

    Ingredients
      

    • ½ cup Butter Unsalted, Room temperatre
    • ½ cup Cream cheese Full fat
    • 1.5 teaspoon Mint extract
    • Green food coloring Optional but highly recommended
    • 4.5 cups Powdered sugar
    • ¾ cup Mini chocolate chips

    Instructions
     

    • In a mixing bowl, add butter, cream cheese, mint extract, food coloring and mix until combined.
    • Gradually, add powdered sugar (1 cup at a time) and continue mixing until smooth. 
    • Stir in chocolate chips. 
    • Chill for 1-2 hours or until mixture is easier to handle. 
    • Scoop out small portions of the mixture and form balls.
      Tip: It helps to wear disposable gloves to form smooth balls and prevents the mixture from sticking to your hands. 
    • Dip in melted chocolate, if you like. Enjoy!

    Notes

    • Chill mixture because it makes it easier to roll into small balls.
    • Use mini chocolate chips instead of the regular sized chocolate chips.
    • Dip in them in melted white chocolate, dark chocolate or semisweet chocolate if you like.
    • You can also coat them in cocoa powder or powdered sugar.

        They are really delicious but you can't freeze them since they have cream cheese in them. I find that cream cheese doesn't thaw well.
