    Refrigerator Cake {Chocolate Oreo Icebox Cake}

    Easy old fashioned no bake refrigerator cake (chocolate icebox cake), homemade with simple ingredients with layers of Oreos, chocolate pudding, Cool Whip.

    This is the perfect dessert for people who don't like traditional cakes. There is always one in the family who isn't fond of the classic birthday cake. For them, this dessert will do the trick! In fact, it's so good that the guests won't even be sad about it! This Strawberry Icebox Cake {No Bake} is the fruity Summer version and just as delicious.

    How To Make Refrigerator Cake Recipe From Scratch?

    1. Make filling– By mixing together pudding mix, milk, Cool Whip.
    2. Assemble- Line pan with Oreos, followed by filling. Continue repeating until you have 2 layers.
    3. Add toppings- This includes roughly chopped Oreos.
    4. Cover- And chill.

    Cake Toppings

    Nuts- Such as chopped peanuts, pecans, walnuts, almonds, or cashews.

    Sprinkles- Choose a color to match your special occasion.

    Frostings- Try Caramel Frosting, Peanut Butter Frosting, Chocolate Ganache Frosting. They would all be delicious atop this cake.

    Candies- Add small candies such as M&Ms or Reese's Pieces or chopped up Hershey bars, Baby Ruth, 100 Grande, Milky Way, Andes Candies, or whatever you prefer.

    Pretzels- For a sweet and salty combination.

    Dulce du leche- Drizzle this homemade Dulce Du Leche for a sweet addition to the chocolate.

    Jams- Such as this homemade Strawberry Jam or whatever flavor you like best.

    Nut butters- Just warm up some peanut butter, almond butter, sunflower butter or Nutella and drizzle on top of the cake. You can also try this 2 ingredient Nutella Syrup.

    How Long Does No Bake Cake Need To Be Chilled?

    Refrigeration time- Chill for about 6-8 hours or overnight.

    Freezer time- This takes approximately 4 hours, but I recommend freezing it overnight.

    Variations

    Snickers refrigerator cake- Add chopped up peanuts, Snicker bars and homemade Caramel Sauce, and shaved chocolate on top.

    Try different pudding flavors- Such as white chocolate, vanilla, butterscotch, or even a combination of flavors.

    S'mores cake- Use graham crackers instead of Oreos, marshmallow cream for filling and toasted marshmallows for topping.

    Add fresh fruit- Such as strawberries, raspberries, or a layer of bananas under the Oreos.

    Try other cookies– Such as Golden Oreos, Nutter Butters, Biscoff cookies, or graham crackers, instead of Oreos.

    Make it a frozen dessert- Wrap the pan in plastic saran wrap first, followed and aluminum foil and then, store it in the freezer overnight. Let it thaw for 20-30 minutes at room temperature and then, slice and enjoy.

    Add chocolate chips topping- Pick any flavor you like such as dark, milk, white chocolate, peanut butter, butterscotch, or even mint.

    Tips And Techniques For Oreo Icebox Cake

    Freezing Vs. Chilling in fridge- Either can be done for this cake. Just note that freezing produces a firmer cake.

    Homemade pudding Vs. Store-bought puddings- Either can be used. Boxed is more convenient, but this Vegan Chocolate Pudding is delicious as well.

    Plan ahead– This dessert cannot be served immediately, because it must chill in the fridge or freezer in order for the pudding to set properly. I highly recommend making this a minimum of 6-8 hours in advance, if not the night before.

    Serve a crowd– If you are looking to serve more people, then go a head and double it. Just make sure to use a bigger pan or use two 9×13 pans.

    Use cold milk- Because it helps in setting the filling better than warm milk.

    Use full-fat ingredients- This is necessary for the filling to set properly and also produces the creamiest and best flavor.

    Storage

    Refrigerator– Store leftovers in a sealed container for up to 3 days.

    Freezer– Wrap the pan first with saran wrap and then, wrap in tin foil. Then, freeze for up to 1 month. When you are ready to enjoy it,  let it thaw for about 30 minutes at room temperature and then, slice and enjoy!

    Ingredients
      

    • 3 boxes Instant chocolate pudding Dry powder, 3.4 oz each, Full fat
    • 4 cups Whole milk Cold
    • 2 cups Cool Whip Full fat
    • 2 packages Oreos
    • ½ cup Roughly chopped Oreos For topping

    Instructions
     

    • In a large mixing bowl, add pudding mix, cold milk and whisk until combined. It should become smooth and slightly thick.
    • Gently fold in the Cool Whip until combined. Keep aside.
    • In a rectangle pan (Dimensions: 9×13), line Oreos on the bottom to cover the whole pan.
    • Spoon half of the pudding mixture on top of the Oreos and spread gently and evenly with a spatula.
    • Arrange another layer of Oreos on top and spread remaining pudding mixture.
    • Toss roughly chopped Oreos on top.
    • Cover and chill in fridge 6-8 hours or overnight to let the filling set.
    • If you like, you can turn this into a frozen dessert. Wrap the pan in plastic saran wrap first, followed and aluminum foil and then, store it in the freezer overnight. Let it thaw for 30 minutes at room temperature and then, slice and enjoy.
