Cranberry Pie {No Bake}

Easy no bake cranberry pie recipe, homemade with simple ingredients. Loaded with cranberry sauce, whipped cream, orange flavors over a graham cracker crust. A delicious dessert for Thanksgiving and Christmas.

With the oven full of holiday main and side dishes, this dessert is the best! It is NO BAKE, meaning you don’t have to figure out how to time it up with everyhing else you are making. What a life saver! These Orange Cranberry Bread and Apple Cranberry Crisp {Cranberry Crumble} desserts also excellent choices to try out this season.

How To Make Cranberry Pie From Scratch?

  1. In a bowl– Add cream cheese and sugar. Mix.
  2. Add cranberry sauce, vanilla extract, orange zest– Mix.
  3. Gently fold in the Cool whip and food coloring.
  4. Spread this cranberry filling in the prepared pie pan with graham cracker crust.
  5. Chill overnight- Till firm.
  6. Prior to serving– Spread whipped cream on top.
  7. Garnish with fresh cranberries and orange zest.

Cranberry Pie Filling

Mix all of the ingredients, except the Cool Whip, until combined. Then gently fold in the Cool Whip. The filling will be rich and perfectly creamy.

  • 2 boxes Cream cheese Full fat, 8 oz. box each
  • 1/4 cup Granulated sugar
  • 1 can Whole cranberry sauce 14 oz. can
  • 1 tsp Vanilla extract Can replace with orange extract if you have that on hand
  • 2 tsp Orange zest
  • 1 container Cool whip 8 oz. container
  • Pink food coloring Optional

Storage

Refrigerate– In a sealed container for up to 3 days.

Freeze– In a freezer safe container for up to 1 month.

Reheat– This pie can be eaten frozen, or thawed in the fridge. DO NOT heat it! It will ruin the pie.

Variations

Other pie crusts– Such as a regular baked crust, Oreo crust, gingersnap crust, or pretzel crust instead of the graham cracker crust.

Apple Cranberry Pie– Chop small chunks of apple to add to the pie filling.

Add Nuts– Such as pecans, walnuts, almonds, or cashews.

Add other berries- Like raspberries, strawberries, blueberries, cherries, or even blackberries.

Frozen Cranberry Pie– This pie can be frozen and then served straight from the freezer. This isa wonderful make ahead option!

Tips And Techniques

Use whole cranberry sauce– The jellied version will not work!

Can I use homemade fresh cranberry sauce? Yes, as long as it’s thick and NOT runny, or else the pie won’t set. Also, make sure the sauce is cooled completely. If it is at all warm, it will not set either.

Use full fat cream cheese– For the best, creamiest, and richest flavor.

Can I use a store bought graham cracker crust? Yes, this is a great way to save time and is so convenient.

Do I need to soak fresh cranberries? No, you do not need to soak them before using them.

When do I add the whipped cream topping? It can only be spread on top of the pie once the filling has set. That is why I do it prior to serving.

How long does the pie need to chill for? Chill overnight or at least 6 hours until filling is firm.

Cool Whip substitute- Homemade whipped cream is a good alternative but I do believe that Cool Whip helps hold the pie filling together much better and firmly.

No Bake Cranberry Pie

Ingredients

  • 2 boxes Cream cheese Full fat, 8 oz. box each
  • 1/4 cup Granulated sugar
  • 1 can Whole cranberry sauce 14 oz. can
  • 1 tsp Vanilla extract Can replace with orange extract if you have that on hand
  • 2 tsp Orange zest
  • 1 container Cool whip 8 oz. container
  • Pink food coloring Optional
  • 1 Graham cracker crust 9 inch
  • 1.5-2 cups Whipped cream Or Cool Whip, For topping

Instructions

  1. In large mixing bowl, add cream cheese and sugar and mix until smooth.

  2. Add cranberry sauce, vanilla extract, orange zest and mix until combined.

  3. Gently fold in the Cool whip and food coloring (if using) until smooth and creamy.

  4. Spread this cranberry filling in the prepared pie pan with graham cracker crust.

  5. Chill overnight or at least 6 hours until filling is firm.

  6. Prior to serving, use a spatula to spread whipped cream on top.

  7. Garnish with fresh cranberries and orange zest, peels or curls.
