How To Make Cranberry Pie From Scratch?
- Mix cream cheese, sugar, cranberry sauce, vanilla extract, orange zest- Until smooth.
- Fold in the Cool whip- Do this very gently and slowly.
- Spread filling- In the prepared graham cracker crust.
- Chill- Till filling is firm.
- Enjoy- Spread whipped cream on top and decorate with fresh cranberries and orange zest.
Cranberry Pie Filling
It's made by mixing together cream cheese, granulated sugar, cranberry sauce, vanilla extract, orange zest and pink food coloring until smooth. Then, Cool Whip is gently folded in until mixture is rich and creamy.
Storage
Refrigerate- In a sealed container for up to 3 days.
Freeze- In a freezer-safe container for up to 1 month. This pie can be eaten frozen, or thawed in the fridge. Do not heat it!
Variations
Try other pie crusts- Such as a regular blind-baked Flaky Butter Pie Crust or Oreo crust (use golden Oreos) or gingersnap crust, or pretzel crust.
Apple cranberry pie- Chop small chunks of apple to add to the pie filling.
Add nuts- Such as roughly chopped pecans, walnuts, almonds, or cashews. You can also use them as a topping over the whipped cream.
Try other berries- Such as raspberries, strawberries, blueberries, cherries, or even blackberries.
Frozen cranberry pie- This pie can be frozen and then served straight from the freezer. It's a wonderful make-ahead option!
Consider other flavorings- By using lemon or lime zests or other extracts.
Mix in shredded coconut- It makes it chunky and chewy and gives it fun twist.
Decoration ideas: Pipe whipped cream beautifully with piping tips or sprinkle shredded white chocolate or add sprinkles or shredded coconut or you can even decorate with Sugared Cranberries (Candied Cranberries).
Tips And Techniques
Use whole cranberry sauce- The jellied version will not work!
Can I use homemade fresh cranberry sauce? Yes, as long as it's thick and not runny, or else the pie won't set. Also, make sure the sauce is cooled completely.
Use full fat cream cheese- For the best, creamiest, and richest flavor.
Can I use a store-bought graham cracker crust? Yes, this is a great way to save time and is so convenient.
Do I need to soak fresh cranberries? No, you do not need to soak them before using them.
When do I add the whipped cream topping? It can only be spread on top of the pie once the filling has set. That is why I do it just prior to serving.
How long does the pie need to chill for? Chill overnight or at least 6 hours until filling is firm.
Cool Whip substitute- Homemade whipped cream is a good alternative but I do believe that Cool Whip helps hold the pie filling together much better and firmly.
Food coloring is optional- The filling will naturally have a light pink color but the addition of food coloring makes it more vibrant.

Ingredients
- 2 boxes Cream cheese Full fat, 8 oz. box each
- ¼ cup Granulated sugar
- 1 can Whole cranberry sauce 14 oz. can
- 1 teaspoon Vanilla extract Can replace with orange extract if you have that on hand
- 2 teaspoon Orange zest
- 1 container Cool whip 8 oz. container
- Pink food coloring Optional
- 1 Graham cracker crust 9 inch
- 1.5-2 cups Whipped cream Or Cool Whip, For topping
Instructions
- In large mixing bowl, add cream cheese and sugar and mix until smooth.
- Add cranberry sauce, vanilla extract, orange zest and mix until combined.
- Gently fold in the Cool whip and food coloring (if using) until smooth and creamy.
- Spread this cranberry filling in the prepared pie pan with graham cracker crust.
- Chill overnight or at least 6 hours until filling is firm.
- Prior to serving, use a spatula to spread whipped cream on top.
- Garnish with fresh cranberries and orange zest, peels or curls.
