Key ingredients
- Bananas- Be sure they are ripe.
- Pumpkin puree- This is not the same as pie filling.
- Eggs- Use large at room temperature.
- Oil- Makes the bread moist.
- Cake mix- I like spice cake best with this recipe.
Variations
- Add a glaze on top- This Powdered Sugar Glaze, for example, would be a perfect pair.
- Drizzle chocolate- Such as this Chocolate Ganache (2 Ingredients) on top or just melted chocolate.
- Some add-ins options for this sweet bread- Chocolate chips, shredded coconut, sprinkles, peanut butter chips, caramel bits, or chopped nuts like pecans, peanuts, or cashews.
- Try a different cake mix- Use a chocolate cake mix instead for a pumpkin chocolate bread. You can also use a yellow cake mix, and if you still want the spice flavor just add in 2.5 teaspoon pumpkin pie spice.
- Add a streusel topping- This is made by mixing together brown sugar, butter, flour, and cinnamon (optional), then tossing that on top of the batter prior to baking.
- Top with frosting- Cream Cheese Frosting is my favorite and you can even try this Chocolate Cream Cheese Frosting. To add a bit of tanginess that balances the spices you can layer the top with Easy Sour Cream Frosting (Vanilla) or Chocolate Sour Cream Frosting.
How to make easy pumpkin banana bread recipe with cake mix?
- Mix together- Mashed bananas, pumpkin puree, eggs and oil.
- Add cake mix- And mix until just combined.
- Pour batter- Into loaf pans.
- Bake- Until an inserted toothpick in the center comes out clean.
Tips and techniques
- You must use pumpkin puree- Not pumpkin pie filling. They are not interchangeable.
- Why did my bread sink in the middle?- This can be due to several factors, including inaccurate measurements, opening oven door during baking causing a drastic drop in temperature, or even an oven that is not calibrated correctly. You may also just need to cook it a bit longer.
- Buy the right cake mix- This recipe is for a 15.25 oz box of cake mix, not a smaller one, so be sure to check.
- Use room temperature ingredients- Because this helps everything blend together more smoothly.
- Ripe bananas- You don't want to use green bananas for this or else it won't turn out with good flavor or texture. However, be sure they are not so ripe that they are practically rotting. Sometimes they are just too far gone even for bread and you just need to let them go.
- How can I tell it's done?- A good rule of thumb is to insert a toothpick into the center of the bread. When it comes out clean it is ready. Just be sure not to overcook, because then the bread will be dry.
- Don't over-mix the batter- Because then the bread can become chewy.
Storage
- Room temperature- This can be stored in a container on the counter for 2-3 days.
- Refrigerate- Store in a sealed container for up to 3 days.
- Freeze- Store in a sealed container and wrap in plastic wrap to keep for up to 1 month. Thaw before serving.
- Make ahead- You can make this dish up to 3 days in advance if kept in a sealed container in the fridge. You can also make and freeze for up to 1 month. Thaw before serving.
Recipe FAQs
It needs more time to rise and cook in the oven. Also, be sure to use accurate measurements so you don't get too much or too little of one ingredient. You also want to check your oven temperature and keep the oven door closed during baking.
No. Puree is pure pumpkin blended up to a smooth consistency whereas the pie filling has added ingredients, like spices, sugar, and thickening agents.
Be sure you measure ingredients correctly so that one ingredient, such as flour, isn't overpowering the pumpkin flavor. Also, make sure you are using puree from a baking pumpkin as opposed to a carving pumpkin.
This can happen when you cook it for too long or when you measure ingredients incorrectly.
