    Since I love seasonal candies and Peeps have finally hit the stores, I was dying to use them in a dessert. For those of you who have never tried them, they are little marshmallows in Easter-inspired shapes, covered in sugar. They come in so many colors and shapes but my favorite are the yellow bunny ones. This cake is really easy to put together and it's something that even beginner cake decorators can make.     How to make easy Peeps cake from scratch?

    1. Bake a round cake- Let it cool completely.
    2. Frost the entire cake- With icing.
    3. Decorate the side- With sprinkles.
    4. Stick Peeps all around the top- Standing up.
    5. Fill the space in the center- With sprinkles. Enjoy!

    Variations For Peeps Easter Cake/ Birthday Cake

    • Piñata version- Hide the Peeps inside and it would be a nice surprise for kids when they slice into it.
    • Sunflower version- Place the peeps flat in a circle on top to look like a sunflower. It would also be a fun sunflower birthday cake for girls' parties.
    • Try another cake flavor- Such as Best Vanilla Cake Recipe, Moist Triple Chocolate Cake, Moist Lemon Cake Recipe, or this Funfetti Cake/Confetti Cake.
    • Try another frosting flavor- Such as American Buttercream Frosting, White Chocolate Buttercream Frosting, or Brown Sugar Frosting.
    • Make a larger cake- This makes 6 mini cakes, but you can easily make one larger cake.
    • Use other sprinkles– The sides of the cake are decorated with cute bunny and duck shaped sprinkles. I found these sprinkles at Target but I have also seen them at some dollar stores. You could use other shapes such as birds, eggs, flowers, or whatever matches your Easter aesthetic.

    Tips And techniques

    • Cool cakes completely before decorating– Otherwise the icing will melt and slide right off leaving a mess.
    • Frost sides of cake smoothly– Use an icing spatula or a smooth non-serrated knife along the sides to smooth the icing.
    • Press sprinkles gently– Because this prevents them from disappearing into the icing. You can use your fingers or tweezers to place them.
    • Stand peeps up- This creates a lot of height and visual appeal instead of laying them down.
    • Fill the center of Peeps circle- Use sprinkles or other Easter candies in the center with the hollow space.

    Storage

    • Refrigerate- Leftovers can be stored in a sealed container in the fridge for up to 3 days.
    • Freeze- Unfrosted cakes can be stored in a sealed container for up to 1 month. When you are ready to enjoy it, let it thaw in the fridge overnight and then, decorate as per instructions below.
    • Make ahead instructions- This cake can be baked and decorated 1 day in advance and stored at room temperature until you are ready to serve.

    Ingredients
      

    • 6 Carrot cakes Round, 4 inch each (Recipe will make 6 mini mini round cakes. You can stack 2 on small plates to make a total of 3 individual layer cakes)
    • 4 cups Cream cheese frosting Green
    • 20 Peeps Bunny shape
    • Easter sprinkles

    Instructions
     

    • Bake your mini cakes and let them cool down completely.
    • Ice the top of one cake with frosting and place another cake on top of it. Press it down gently. Ice the entire cake with frosting.  Make 3 mini cakes in the same way. 
    • Stick Easter sprinkles all around these mini cakes. 
    • Arrange the Peeps on top of the cake in a circular pattern.
    • Fill the empty space inside the "Peep circle" with sprinkles.
    • Toss some more sprinkles around the base of your cake. Enjoy!

    • Instead of mini cakes, you can make one 8 inch round cake too. 
    • Leftovers can be stored in a sealed container in the fridge for up to 3 days.
