    Easy, old fashioned crustless cranberry pie recipe, homemade with simple ingredients. Loaded with fresh cranberries, orange zest, cinnamon, vanilla. A cross between pie and cake with a crunchy sugar topping. Also known as impossible pie.

    Key ingredients for Thanksgiving pie

    • Sugar- Granulated sugar is best.
    • Flour- All-purpose flour has been the most successful in my experiments.
    • Spices and extracts- I like to use cinnamon, vanilla and orange extract.
    • Eggs- These should be large and at room temperature.
    • Butter- This should be unsalted.
    • Cranberries- You can only use fresh ones in this recipe. Make sure to wash them first and pat them dry.

    Variations

    • Apple cranberry pie- Add diced peeled apples for more fruit flavor.
    • Add other berries- Such as strawberries, blueberries, raspberries, or cherries.
    • Try other extracts- Such as lemon, lime, or almond.
    • Add other zests- Such as lemon, lime, or orange zest.
    • Mix in nuts- Such as toasted almonds, walnuts, pecans, or even pistachios.
    • Add shredded sweetened coconut- It adds a great texture and flavor.
    • Cranberry bars- Make it in a rectangular pan, and cut square pieces.
    • Consider other spices- Such as ginger or all-spice.
    • Add fresh herbs- Such as rosemary, lavender, or rose.

    How to make easy crustless cranberry pie recipe from scratch?

    1. Mix dry ingredients- This includes sugar, flour, cinnamon.

    2. Add wet ingredients- This includes eggs, butter, vanilla extract, orange extract.

    3. Mix- Until combined.

    4. Add cranberries-These should be fresh, washed and patted dry.

    5. Fold them in gently- Until evenly distributed.

    6. Spread batter- In greased pie dish.

    7. Sprinkle sugar- Do this evenly on top.

    8. Bake- Until golden brown.

    This pie tastes amazing on its own but many people serve it alongside vanilla ice cream or homemade Whipped Cream. You can also top it with any of the following: American Buttercream Frosting, White Chocolate Buttercream Frosting, Homemade Caramel Sauce, Homemade Dulce De Leche or even white chocolate ganache.

    Tips and techniques

    • Do you have to cook cranberries before cooking? No, you do not need to cook them, prior to putting them in the pie. Just wash and pat them dry first.
    • Fresh cranberries vs. Frozen cranberries vs. Dried cranberries- Fresh yields the best results. I don’t recommend frozen ones since they release a lot of water during baking and ruin the texture! Dried cranberries add an awful chewy texture.
    • No need to add a pie crust in this recipe- Because it is a crustless pie after all.
    • Don't replace butter with oil- The texture will be different. It can be replaced successfully with coconut oil though.
    • Don't over mix- Because this will give the pie a dense unpleasant texture.
    • Adjust flavorings- Add more or less vanilla extract and orange extract, based on your personal preference.

    Why is my pie dry? How to fix dry pie?

    It may be dry if it was overcooked. To keep it from becoming dry take the pie out when the edges are set and top is golden brown and a toothpick inserted in the center comes out clean. Some people in my family prefer a gooey center and like to under-bake slightly. They remove it from the oven at 30-33 minutes or when an inserted toothpick in the center comes out with a few moist wet crumbs.

    This may mean the pie is undercooked. Continue cooking until the edges are set and top is golden, and s toothpick inserted comes out clean. It can also be soggy if the ingredients were not measured properly.

    Storage

    • Refrigerate- Leftovers can be stored in a sealed container for up to 3 days.
    • Freeze- Store in a sealed container for up to 1 month. Thaw in the fridge overnight when you are ready to enjoy it.
    • Room temperature- This can stay out, covered in foil or saran wrap, for up to 5 hours.

    Ingredients
      

    • 1 cup Granulated sugar
    • 1 cup All-purpose flour
    • 1 teaspoon Cinnamon powder Can also replace with pumpkin pie spice
    • 2 Eggs Large
    • ½ cup Butter Unsalted, Melted, Should not be boiling hot or else the eggs will scramble
    • 1 teaspoon Vanilla extract
    • 1 teaspoon Orange extract Optional, Can also replace with orange zest
    • 2 cups Cranberries Fresh, Washed, Patted Dry

    Toppings

    • 2 tablespoon Granulated sugar
    • ¼ cup Cranberries Fresh, Washed, Patted Dry

    Instructions
     

    • In a large mixing bowl, whisk together sugar, flour, cinnamon.
    • Add eggs, butter, vanilla extract, orange extract (optional) and mix until combined. Don't over-mix!
    • Stir in cranberries until evenly distributed. The pie batter will be very thick.
    • Preheat oven to 350F. Spray a 9-inch round glass pie dish very well with cooking spray; set aside. I used a glass pie dish; baking times may vary if using metal.
    • Pour batter in a greased pie dish (9 inch) and use a spatula to spread it out.
    • Sprinkle sugar on top.
    • Press the remaining cranberries on top.
    • Bake at 350 degrees F for 35-40 minutes or until edges are set and top is golden brown and a toothpick inserted in the center comes out clean. Some people in my family prefer a gooey center and like to under-bake slightly. They remove it from the oven at 30-33 minutes or when an inserted toothpick in the center comes out with a few moist wet crumbs.
    • Remove from oven and let it cool.
    • Then, use a sharp knife to cut slices. Enjoy with whipped cream or vanilla ice cream.

    Notes

    • Mix in other extracts or fresh herbs for a different flavor profile.
    • Eggs must be at room temperature because they blend together the best this way. 
    • Make sure you are using unsalted butter to keep this pie from becoming too salty.
    • You must use fresh cranberries. These cannot be replaced with dried or frozen.
