    These chocolate coated raspberries are the best dessert or snack for kids and adults. They are also a fun way to decorate cakes and cupcakes. These are a hit with friends, just like my Chocolate Covered Cherries and Frozen Chocolate Covered Bananas and Chocolate Covered Strawberries and Chocolate Covered Pretzels and Chocolate Covered Blueberries. They all taste like candies.

    How to make easy chocolate covered raspberries from scratch?

    1. Stuff berries- With chocolate chips.
    2. Dip berries – In melted chocolate.
    3. Remove excess chocolate– Tap the fork on the side of the bowl.
    4. Enjoy- Let chocolate set and dig in!

    Variations

    • Use white chocolate or dark chocolate- For a different flavor profile.
    • Turn them into a frozen treat- Store them in the freezer until you are ready to enjoy them.
    • Fill them with spreads- Such as jams, peanut butter, almond butter, Nutella, Biscoff cookie butter.
    • Add toppings- Such as colorful sprinkles, nuts, toffee, crushed cookies like Oreos or vanilla wafers, shredded coconut, crushed graham crackers, or candies. Make sure every topping you use is roughly chopped, diced or shredded for even coating.
    • Use colored candy melts or colored white chocolate– Just remember that white chocolate can only be colored with oil-based food coloring.
    • Add salt- This is great if you like sweet and salty treats, Before the chocolate hardens, sprinkle the top with coarse sea salt.
    • Use other chocolate chips for filling- Try semisweet chocolate chips, dark chocolate chips, white chocolate chips, butterscotch chips, white chocolate chips.
    • Fill them with icing- Try Caramel Frosting or Chocolate Ganache Frosting.

    Tips and Techniques

    • Melted chocolate should not be too warm– This is very important because if it’s too hot, the berries will start breaking down and getting too soft during dipping.
    • Don’t use very ripe raspberries- They are too soft and start falling apart when you dip them. Also, it’s really hard to get them coated properly.
    • Dip one berry at a time– Because this allows for easy dipping since the bowl is not crowder. Also, each berry gets evenly coated.
    • Line tray with wax paper or parchment paper- Because this makes clean-up easy and also allows easy removal of berries easy.
    • Berries must be dry- After washing them, pat them dry with paper towels. This is very important because chocolate doesn't coat wet berries that well.

    What is the best chocolate for dipping?

    Use semisweet or dark chocolate chips. Milk chocolate was too sweet and didn't compliment the sweet and tangy berry flavor too well. Choose a brand whose flavor you like best. I highly recommend Guittard and Ghirardelli brands. Their flavor and quality is top notch.

    How to melt chocolate?

    You can use a double boiler or a microwave. If using a microwave, heat at 15-20 second intervals. Be sure to stir in between each interval because this prevents chocolate from burning.

    Storage

    • Refrigerate- In a sealed container for up to 2 days.
    • Freeze– In a sealed container for up to 1 month.

    Ingredients
      

    • 20 Raspberries
    • 20 Chocolate chips Semisweet Or Dark
    • 2 cups Chocolate chips Melted, Semisweet or Dark

    Instructions
     

    • Wash your raspberries and pat them dry with a paper towel.
    • Stuff each raspberry with your choice of chocolate chips.
    • Dip each stuffed berry into a bowl of melted chocolate, one at a time, using a fork.
    • Tap the fork on the side of the bowl to allow excess chocolate to drip off into the bowl..
    • Place each chocolate dipped berry on a tray, lined with parchment paper.
    • Allow the chocolate to set. Enjoy!
