    Easy Chocolate Blueberry Truffles

    Easy chocolate blueberry truffles recipe, homemade with simple ingredients. These are no bake and make a delicious healthier guilt-free dessert or snack.

    My kiddo loves blueberries and I am always making new treats for him like these Blueberry Cupcakes or these Chocolate Covered Blueberries or these Lemon Blueberry Muffins. However, I wanted to make some healthier desserts and snacks for him to enjoy as well. I got to work and spent almost a month perfecting this recipe until he gave me a thumbs up. Unlike regular truffles, these ones have a little bit of texture but they still taste incredible and he loves snacking on them as much as he enjoys gulping down his Mama's rocking Blueberry Smoothie. You have no idea how happy that makes me.

    Key ingredients

    • Blueberries- These should be fresh, washed and patted dry.
    • Coconut oil- I used it in solid form.
    • Oats- These should be the quick cooking kind.
    • Coconut- Make sure to use desiccated for best texture.
    • Honey- I love using raw honey in desserts.
    • Protein powder- Unflavored is best to use in this recipe.
    • Chocolate- Use dark for covering and blue for drizzling.

    Variations

    • Alter quantities- The great thing about this recipe is that you can alter the quantity of ingredients to suit your preference. Don't like oats? Use more shredded or desiccated coconut instead. Don't like honey? Use molasses as a sweetener.
    • Replace dark chocolate- With semisweet chocolate, milk chocolate, or even white chocolate
    • Add some zest- Such as lemon zest or lime zest for an additional pop of flavor.
    • Add different extracts- Of your choice for a different flavor profile.
    • Use add-ins- Such as mini chocolate chips, crushed nuts, chopped up candy bars, or mini candies.
    • Try other toppings- Like sprinkles or sanding sugar, mini candies, dried fruit, crushed peppermint candies, crushed freeze-dried fruit, or crushed pretzels.

    How to make easy chocolate blueberry truffles recipe from scratch?

    1. Mix together- Coconut, oats, coconut oil, and collagen peptides. (Image 1).
    2. Add in- The honey with a spatula (Image 2).
    3. Fold in blueberries- And purple coloring, if desired (Image 3).
    4. Combine altogether- With a hand held immersion (Image 4).
    5. Cover and chill- Overnight or until firm.
    6. Melt chocolate- While mixture is chilling (Image 5).
    7. Form balls- From chilled mixture and place on a lined cookie tray.
    8. Dip each ball- In melted chocolate (Image 6).
    9. Place them- On a cookie tray, lined with wax paper (Image 7).
    10. Allow chocolate to harden- Then drizzle melted blue chocolate and let it set (Image 8).

    Tips and techniques

    • The mixture must be chilled- Overnight or at least 6 hours. That makes it firm, easier to handle, and most importantly, easier to roll into nicely shaped balls.
    • You must store leftover truffles in the refrigerator- Or else they will start melting. That's because they have coconut oil, which becomes liquid at warm temperatures.
    • Wear disposable plastic gloves- Because this makes it so much easier to roll the mixture into balls. It's not as sticky or messy. I highly recommend it from experience.
    • Mixing the ingredients- I used a hand-held immersion blender to mix all the ingredients together but you can easily use a food processor too.
    • Fresh blueberries cannot be replaced with frozen blueberries- Because that will make the mixture very watery and it will not come together properly into balls.
    • Use unflavored protein powder- Or has a fruity flavor so that it doesn't alter the overall flavor.
    • Stick to quick cooking oats- I have tried this recipe with old fashioned oats and it just did not work. I felt like it added a very chunky texture that wasn't appealing in a truffle.
    • Use raw honey- Because it is thicker and also tastes so delicious. Be sure it is high quality, too.
    • Purple food coloring is optional- But I recommend it because it will enhance the color and vibrancy.
    • You cannot use shredded coconut- In this recipe. It must be desiccated coconut otherwise the mixture will not be smooth.

    Recipe FAQs

    Why didn't my truffles set?

    It is likely you didn't chill the dough beforehand. Also, be sure that your measurements are accurate, because this can affect the setting process.

    Can I use frozen blueberries instead of fresh blueberries?

    No. Frozen ones will increase the water content and won't allow the ingredients to come properly together into balls.

    What is desiccated coconut?

    This is the flesh of the coconut that has been finely grated and dried into a snow-like texture.

    Storage

    • Room temperature- For about 2-3 hours. Coconut oil will start getting softer and can even melt when temperatures are warm and cause the truffle to melt too.
    • Refrigerate- Store in a sealed container for up to 3 days. 
    • Freeze- Store in a sealed container for up to 1 month. Thaw in the fridge before serving.
    • Make ahead- Thee can be made up to 3 days before serving if kept in a sealed container in the fridge. You can also freeze them up to 1 month before using. Simply place in a sealed container, thaw in the fridge, then serve.

    Ingredients
      

    • 1 cup Blueberries Fresh, Washed and patted dry
    • ⅓ cup Coconut oil
    • ⅔ cup Oats Quick cooking
    • 1 cup Coconut Desiccated
    • ¼ cup Honey I like to use raw honey
    • ¼ cup Vital Proteins collagen peptides Or any unflavored protein powder of your choice
    • Purple food coloring Optional
    • 1 cup Dark chocolate Melted, For dipping, Can be replaced with semisweet chocolate or white chocolate
    • ½ cup Blue chocolate Melted, For drizzling

    Instructions
     

    • Add the blueberries, coconut, oats, coconut oil, honey, collagen peptides in a large mixing bowl. Also, add purple gel coloring, if you like.
    • Use a hand held immersion blender to mix everything together. You can also do this step with a food processor.
    • Cover and chill this mixture overnight or until everything becomes firm.
    • Scoop out small portions of this mixture and roll them into small balls and place them on a cookie tray lined with wax paper.
    • Dip each ball in melted dark chocolate and place them on a cookie tray, lined with wax paper.
    • When the chocolate hardens, drizzle melted blue chocolate and let it set. Enjoy!
