Carrot Brownies

These fudgy carrot brownies are so easy to make and really ooey gooey. Top them off with some frosting, coconut, candies and they are perfect for any party!

I decided to try something different yesterday and made these outrageous carrot brownies.

Normally, I am a HUGE fan of my fudgy brownies with crackly tops recipe. 

Everything about them is perfect!

But anyways, I had some leftover shredded carrots from a meal I made a couple of days ago.

Since I am not a fan of wasting food, I decided to play around with some ingredients which resulted in these carrot brownies.

They were rich and choco-licious and the addition of m&m candies along with coconut took the flavor over the top!


Those carrots added a bit of chewiness, which was fascinating!

No wonder these brownies were gone in a day.

While I was photographing these brownies, my little one was sitting in his bouncer…

And his face would light up every time I showed him the box of m&m!

Maybe he likes red! hehe

That’s when I realized my little baby is growing up so fast.

He grabbed the box and held it for 1 WHOLE MINUTE all by himself!

  • 1 cup All-purpose flour
  • 1 cup Sugar Granulated
  • ½ cup Carrots Shredded
  • ½ cup Oil
  • ½ cup Cocoa powder
  • 1 Egg Large
  • 1 tsp Vanilla extract
  • ½ cup M&M candies
  • ¼ Coconut Desiccated
  • 1 cup Marshmallow buttercream icing


  1. In a deep bowl, add the oil, sugar, shredded carrots, egg and vanilla extract and mix.
  2. When batter is thoroughly combined, add cocoa powder and flour and mix again.
  3. Pour the batter into a pan (Dimensions: 9x9) and spread with a spatula.
  4. Tip: Spread aluminum foil on your tray and spray it with oil and then pour the brownie batter. This way, it’s easier to remove the brownies from the pan after they are done baking.
  5. Bake at 350 degrees for 20-25 minutes.

  6. Once the brownies cool down, spread chocolate marshmallow frosting on the top. Then, sprinkle some shredded coconut and chopped-up m&m candies. Enjoy!

    @ Thoma…i have heard greek yogurt can be substituted for sour cream but i have never tried it. So, i don’t know if that would affect the flavor…
