Easy pink sparkling champagne jello shots recipe, homemade with simple ingredients. These jelly shots are great for serving at New Year's parties with many flavor possibilities. These can be made alcoholic or non alcoholic.

The New Year will be here in less than a week and should be celebrated with today's recipe as well as these Champagne Cupcakes and these Champagne Cookies and of course this Pink Champagne Cake (With Strawberry). Today's treat is an adult version of jello. It's jiggly and is not overwhelmingly sweet and so pretty. You can even serve these at Oscar parties, 21st birthday parties and bachelorette parties.

Key ingredients for sparkling jelly shots
- Corn syrup- This is used to line the rim of glasses so that the sprinkles adhere to it.
- Sprinkles- I used edible gold stars but you can use any other design or color you like.
- Water- I like to use filtered water.
- Gelatin- It's best to use unflavored.
- Champagne- This can be alcoholic or non-alcoholic, per your preference.
- Ginger Ale- You can also replace this with Sprite or 7UP or Sparkling cider
- Food coloring- This is optional but I highly recommend it because it really enhances the overall color.
Variations
- Add fresh fruits- Such as raspberries, cherries, small slices of peaches and strawberries. Add them in the cups. Then, pour champagne mixture into each glass and let it set.
- Use cream soda- This is such a delicious flavor. Simply replace ginger ale with cream soda.
- Try other rim toppings- Such as sprinkles or pop rocks. Pop rocks are my personal favorite because they add a fun tingling sensation.
- Add extracts- The sky is the limit. Try vanilla, coconut, maple, almond to enhance the flavor even further.
- Top off with whipped cream- Do this once the jello sets. This adds a bit of creaminess and also looks very pretty. Try my Stabilized Homemade Whipped Cream or Chantilly Cream (Creme Chantilly).
- Try different flavors of champagne- I got a bottle of cranberry flavored one as a gift and used that in this recipe but you can use whatever flavor you like. Strawberry or peach or even cherry infused champagnes are all very delicious.
- Make stronger shots- Use vodka instead of champagne.
- Use molds- Instead of shot glasses, you can pour the mixture in molds or you can even pour them in a square pan and cut slices when the jelly sets completely. Make sure to grease the molds/ pan to prevent sticking.
- Make sparkling jello- By using sparkling champagne or sparkling cider or flavored sparkling water.
- Make them non-alcoholic- By using non-alcoholic champagne or sparkling cider.
How to make easy pink champagne jello shots recipe from scratch?
- Add water and gelatin in a saucepan- Heat and mix until gelatin fully dissolves (Images 1,2,3).
- Add ginger ale, champagne, food coloring- And mix until mixture is smooth (Images 4,5,6,7).
- Pour in glasses- And chill until jello sets (Image 8).
Tips and techniques
- Use unflavored gelatin- Because that allows the overall flavor to be exactly what you had in mind.
- Lining the rims is optional- You can skip it if you like.
- Total serving size may vary- That depends on the size of your shot glasses.
- Food coloring is optional- But I think it makes them so festive and colorful.
- Don't try to speed up the "setting" process by freezing- That's because if you leave them inside for too long, the jelly can become rock solid like popsicles and the texture changes.
- Use nonstick saucepan- To prevent burning and sticking.
I used Vital Protein's gelatin, which worked wonderfully in this recipe. It's unflavored, which means it won't affect the overall flavor. It's also healthy and good for your health with no artificial flavors plus it's gluten-free.

I used champagne but some people also like to use vodka. Based on my research, it seems like pink moscato champagne is quite popular.
Typically, it takes 3-4 hours.
I don't recommend it since the texture can change upon thawing. Also, if you leave them inside for too long, they will freeze and become solid like gummy popsicles.
Storage
- Make ahead- These can easily be made a day in advance and stored in the refrigerator until you are ready to serve.
- Room temperature- Once they are set, these can stay out for 1-2 hours.
- Refrigerate- Leftovers can be stored in a tray for up to 3 days.
- Freeze- This is not recommended as they texture changes upon thawing.

Pink Champagne Jelly Shots (Sparkling)

Ingredients
- 2 tablespoon Corn syrup
- ¼ cup Edible gold stars To decorate the rim of glasses
- ½ cup Water
- 2 tablespoon Gelatin Unflavored
- 2 cups Champagne
- ½ cup Ginger Ale Or Sprite or 7UP or Sparkling cider
- Food coloring Pink OR Red, Optional
Instructions
- Brush corn syrup on the rims of shot glasses and flip them over to a plate, filled edible gold stars until rims are fully coated. Keep aside.
- In a non-stick saucepan, add water and gelatin and cook for 2-3 minutes until the gelatin is fully dissolved, stirring constantly.
- Remove from heat.
- Add champagne, ginger ale and food color (optional) and mix everything together.
- Pour into shot glasses. Add a tiny spoon in each glass, if you like,
- Refrigerate for 3-4 hours or until jelly sets. Enjoy!
