    This spin on the common chocolate chip cookie is truly well-beloved by many. They are essentially chocolate cookies with white chocolate chips. Since white chocolate is very sweet, they compliment the bitter flavor of dark chocolate dough very well.

    How to make white chocolate chip cookies?

    1. Mix wet ingredients - Mix eggs and oil together.
    2. Add dry ingredients - Mix in cake mix, along with baking powder.
    3. Add white chocolate chips - Stir them in with a spatula or wooden spoon.
    4. Chill - Cover bowl and chill in fridge for 20 minutes, making it less sticky and easier to work with.
    5. Make cookie balls - Scoop out small portions of the dough and roll small balls.
    6. Bake - For the best chewy results, bake at 350 degrees F for 10-12 minutes.
    7. Enjoy - Let the cookies cool down to room temperature and then, dig in!

    Variations

    • Cranberry white chocolate chip cookies- Add ⅓ cup chopped dried cranberries in the dough. They add sweetness and tartness.
    • White chocolate chip macadamia nut cookies- Instead of the cake mix route, try out these White Chocolate Macadamia Nut Cookies. If it's just the macadamia nuts you want, you can just stir it in with the white chocolate chips in the recipe below too.
    • Add nuts and/or dried fruits- Like dried cranberries, raisins, apricots, pineapples or cranberries. Nuts like pecans, walnuts, almonds, pistachios can also add an earthy element to the cookies.
    • Pumpkin white chocolate chip cookies- Replace chocolate cake mix with pumpkin cake mix. This would be great for Fall and Thanksgiving.
    • Red velvet white chocolate chip cookies- Make these Red Velvet Cookies and add white chocolate chips.
    • Oatmeal white chocolate chip cookies- Oatmeal cookies are meant to be more soft and chewy in the center, while being a little crispy on the outside. Mix in ¼ cup quick cooking oatmeal in the dough. You can also make my Iced Oatmeal Cookies and mix in ¾ cup white chocolate chips in that recipe.
    • Stuff these cookies- Stuffing a cookie is a nice surprise while biting into them. The most common filling is either fudge or caramel. Once the dough is rolled into a ball, flatted in, place a small caramel candy or fudge candy in the middle and fold over the dough into a ball again.
    • Dip them in melted chocolate- If it these cookies are too sweet for your liking, dipping them in some semisweet or dark chocolate could balance that out. Once the cookies are done cooling, dip them half way in melted chocolate and toss some sprinkles, if you like.

    Tips and Techniques

    • Presentation matters! Press few chocolate chips on top of each cookie as soon as you taken them out of the oven. They just look nicer and have that classic "bakery-style" look.
    • Can these cookies be frozen? The cookies cannot be frozen once they have baked. However, you can freeze unbaked cookie dough balls in a sealed container for up to 1 month. When you are ready to enjoy them, just place them on a cookie tray and bake. It will take an additional 1-2 minutes since the dough was frozen.
    • Can butter be used instead of oil? Yes, it can be used for a much richer denser cookie. It would be best to use unsalted butter.
    • Don't over-mix cookie dough! Because the cookies will turn out very tough. Keep mixing the dough until all the ingredients are just combined.
    • What brand of cake mix to use? The brands that I have used successfully are: Pillsbury, Duncan Hones, or Betty Crocker.
    • Chill the dough. This is a very important step so that the cookie dough is more easier to handle and roll into balls. It won't be as sticky. Mosr important, this simple step also prevents the dough from spreading out too much in the oven.
    • Can these be used for ice cream sandwiches? Absolutely. You could take the cookies and put a scoop of your favorite ice cream right in the center. Just be sure the cookies are completely cool before adding the ice cream. You can also sandwich them between this Peanut Butter Frosting or this Classic American Buttercream Frosting.
    • Line pan with parchment paper- Because it really prevents the cookies from sticking to the pan and makes them easy to remove. A Silpat baking mat can also be used.

    Ingredients
      

    • 2 Eggs Large
    • ⅓ cup Oil
    • 1 box Chocolate cake mix
    • ¾ cup White chocolate chips

    Instructions
     

    • In a mixing bowl, add eggs and oil and mix until smooth.
    • Add chocolate cake mix and mix until combined.
    • Stir in white chocolate chips and 
    • Cover bowl and chill cookie dough in the fridge for 20 minutes to make it easier to handle.
    • Scoop out small portions of the dough and make little balls.
    • Place them on a cookie tray, lined with parchment paper.
    • Bake at 350 degrees for 10-12 minutes or until the edges are firm but center is slightly soft.
    • As soon as you remove cookies from the oven, push a few chocolate chips on top of each cookie, before they cool down, for a nicer appearance.
    • Allow the cookies to cool down and enjoy!
