This easy no bake rocky road fudge recipe is homemade with a few simple ingredients. It's rich and creamy and packed with chocolate chips, roasted nuts of your choice and marshmallows. Great as a homemade gift for the Christmas holidays.

The holiday season always pushes me to develop new candy recipes. I can't believe I didn't make today's recipe because it's so creamy and decadent just like this Condensed Milk Fudge (Cranberry and Pistachio) and Christmas Fudge (Candy Cane or Peppermint). I have always enjoyed the rocky road flavor in milkshakes and ice creams but I think it tastes even better in candy form.

Key ingredients
- Chocolate chips- I like to use a combination of milk and semisweet.
- Sweetened condensed milk- Don't confuse this with evaporated milk.
- Roasted nuts- Use a mixture of different kinds, chopped up.
- Marshmallows- Adds to the classic flavor and texture.

Variations
- Add peanut butter- You can do this by adding in peanut butter chips or swirling some peanut butter on top. You can do this with other nut butters or even Biscoff cookie butter.
- Instead of using the mini marshmallows- Swirl in some marshmallow creme.
- For extra chocolatey flavor- Add in some cocoa powder when microwaving the chocolate chips and condensed milk.
- Toss on some sprinkles- Over the top before chilling. You can even color coordinate with different holidays and events.
- Try other add-ins- Such as dried nuts, various chopped candy bars, pretzel pieces, small candies, or chopped cookies.
- Drizzle on top- Some Powdered Sugar Glaze, Homemade Caramel Sauce, Nutella Syrup, or cooled Easy Chocolate Ganache.
- Add extracts- Such as vanilla, caramel, or almond for additional flavor.
- Try with a graham cracker crust- Use 2 cups of graham crackers and ½ cup melted butter mixed together and pressed to the bottom of the pan. Then add the fudge mixture on top and prepare per instructions below. You can also do this with Oreo cookies.
How to make easy rocky road fudge recipe from scratch?
I believe that most classic, old fashioned recipe is made with roasted nuts, mini marshmallows, melted chocolate, and condensed milk. You mix all those ingredients together, spread in a pan, then let it chill a few hours. Once set, cut into square pieces.
1. Heat ingredients in microwave- This includes chocolate chips and condensed milk.
2. Mix- Until smooth and creamy.
3. Add in- The roasted nuts.
4. Toss in- Mini marshmallows.
5. Completely cover- All add-ins with the. chocolate mixture.
6. Spread mixture- Into a lined pan.
7. Add toppings- This includes mini Butterfinger cups and additional marshmallows.
8. Chill until firm- Then cut into slices.
For today's recipe, I used Toll House Morsels and Nestle Fun Size Butterfinger peanut butter cups bags I have been using Nestle products in my desserts for as long as I can remember. They are high quality and always give consistent results and I highly recommend them. Also, I picked up all my ingredients at Dollar General because I found these great coupons and saved some money. Yay!
Tips and techniques
- Do not replace sweetened condensed milk with evaporated milk- Because it is thinner will affect the consistency of the dessert.
- You can use a combination of different types of chocolate- I used half semisweet chocolate and half milk chocolate. But do not use white chocolate because that will change the flavor.
- Be sure to use roasted nuts- Since roasting enhances the "nutty" flavor.
- You can use salted or unsalted nuts- But if you prefer a sweet and salty flavor combination, salted nuts would be a better choice.
- Use your choice of nuts- This can include a variety of nuts like peanuts, almonds, walnuts and pecans. You can use a combination of these nuts or just one type.
- After you allow it to chill, let it sit at room temperature for 15 minutes- Because then it is easier to cut pieces. Also, be sure to use a sharp knife.
- Don't replace the mini marshmallows with large ones- Because they will be way too big and sloppy.

Easy Rocky Road Fudge (Condensed Milk)

Ingredients
- 3 cups Chocolate chips I used a combination of semisweet and milk chocolate
- 1 cup Sweetened condensed milk Not the same as evaporated milk
- ¾ cup Roasted nuts Roughly chopped, I used a combination of walnuts, pecans and peanuts
- 1 cup Marshmallows Mini
- 1 cup Mini Butterfinger peanut butter cups For topping
- ¼ cup Additional marshmallows For topping, Optional
Instructions
- In a large mixing bowl, add chocolate chips and condensed milk and melt in the microwave. Make sure to stir every 30 seconds to prevent the chocolate from burning.
- Stir in chopped nuts.
- Then, stir in the marshmallows.
- Spread this mixture in a square pan (Dimensions: 7x7), lined with wax paper.
- Top it off with additional marshmallows and some mini Butterfinger peanut butter cups. Push them into the fudge slightly with your fingers.
- Cover and chill in the refrigerator overnight or at least 6 hours until firm.
- Use a sharp knife to cut small square pieces and enjoy!

- If you can't find mini Butterfinger cups, you can chop up a Butterfinger candy bar and use that in this recipe.
- Get creative and mix in other nuts and other candies.
- Sweetened condensed milk cannot be replaced with evaporated milk because they are not the same.
