This delightfully RICH and CREAMY pudding is a ridiculously EASY dessert to make.

You can TOP it off with whatever you like: chocolate shavings, whipped cream, fresh berries or you can toss some peppermint chips like I did and give it a holiday spin!

The mocha and peppermint flavors COMPLIMENTED each other so well that I was genuinely surprised, especially since I am not a big mint/peppermint lover.

To make this mocha peppermint pudding, you will need the following ingredients:

3 cups whole milk
3/4 cup sugar
1/4 cup cocoa powder
3 egg yolks (lightly beaten)
3 tbsp cornstarch
1 tbsp espresso powder
1 tsp vanilla extract
1/2 cup peppermint chips

Notes:
– Add 1.5 tbsp espresso powder if you want a stronger coffee flavor.
– You need to keep mixing this pudding while it’s cooking or else you will end up with little lumps.

And here are the steps:

Step 1:
In a deep saucepan, add 2 cups milk, cocoa powder, espresso powder and sugar.

Step 2:
Cook on medium heat and keep stirring everything together.

Step 3:
In a separate bowl, add 1 cup milk and cornstarch.
Mix everything together until there are no lumps.

Step 4:
Pour this cornstarch milk into your saucepan.
Keep mixing with a spoon until your mixture becomes thick.

Step 5:
Now, reduce the the heat to low and add the lightly beaten egg yolks.
Stir until everything is thoroughly combined.

Step 6:
Bring the pudding to a very light boil and remove from heat.

Step 7:
Add the vanilla extract and gently stir it into the pudding.

Step 8:
Pour this pudding into ramekins or small bowls and chill for about 2 hours in the fridge.

Step 9:
Prior to serving, toss some peppermint chips on top of the pudding.

And you are done!
