The flavors could not be a better metaphor for the season itself.     How To Make Mexican Hot Chocolate Cookies Recipe With Cake Mix?

    1. Whisk eggs and oil- Until foamy.
    2. Add dry ingredients- This includes cake mix, baking powder, cinnamon powder, cayenne pepper, chili powder, salt.
    3. Cover- And chill.
    4. Form cookie balls- And roll in granulated sugar.
    5. Bake- Until the edges are firm.

    Variations For Spicy Hot Cocoa Cookies

    Make fudgy cookies- Under cook them slightly for a softer texture.

    Add chocolate chips- For even more chocolate decadence, add dark, milk, or white chocolate chips. They can be regular sized or mini sized.

    Add mini marshmallows- It is best to add them after baking by quickly pushing them into the cookie on top.

    Add nuts- Try chopped or slivered almonds, pecans, peanuts, walnuts, cashew. Toast them first for an even nuttier and rich flavor.

    Stuff them- With caramel or Rolo candies.

    Frost them- Once the cookies cool, ice them in Caramel Frosting {3 Ingredients} or Chocolate Ganache Frosting {2 Ingredients} or Chocolate Cream Cheese Frosting.

    Make cookie sandwiches- Put two cookies together and fill the middle with ice cream or frosting such as those listed above.

    Dip in melted chocolate- You can use milk, dark, semisweet, or white chocolate. Dip halfway or all the way through.

    Add lime- Add a little lime juice or zest to enhance the chocolate and chili flavor

    Add espresso- To deepen and intensify the chocolate flavor even more.

    Top with crushed peppermint- Reduce the amount of cayenne just a little and then add peppermint pieces on the top of the cookie.

    Add other spices- Such as ginger and cardamom.

    Make it red- Use a red velvet cake mix for an even more festive and "spicy" looking cookie.

    Tips And Techniques Chocolate Spice Cookies

    Adjust amount of spices- Add more or less based on your preference.

    Skip coating in granulated sugar- Or you can coat them in powdered sugar similar to my Snowball Cookies (Wedding Cookies).

    Don’t over-mix the cookie dough– Because that yields very tough cookies. Mix until just combined, even if there are a few lumps.

    All ingredients should be at room temperature– Because they will blend together smoothly and evenly.

    Chill cookie dough– Do not skip this step because it makes it easier to handle the dough and form balls. It also prevents cookies from spreading too much during baking.

    What cake mix flavor to use? For maximum chocolate flavor, use Devil’s food cake mix or chocolate cake mix. However, you can use whatever chocolate cake mix you prefer.

    Can I use butter instead of oil? Yes! Just make sure to use unsalted butter and it should be melted.

    Storage Of Homemade Cookies

    Room temperature- Store in a cookie jar for up to 3 days.

    Freeze- Baked cookies can be frozen in a freezer safe bag or container for up to 1 month. You can also freeze raw cookie dough balls in a sealed container for up to 1 month and then bake, whenever you like.

    Ingredients
      

    • 2 Eggs Large
    • ⅓ cup Oil Unsalted
    • 1 box Chocolate cake mix
    • 1 teaspoon Baking powder
    • 2 teaspoon Cinnamon powder
    • ½ teaspoon Cayenne pepper
    • ½ teaspoon Chili powder
    • ¼ teaspoon Salt
    • 1 cup Granulated sugar

    Instructions
     

    • In a mixing bowl, whisk together eggs and oil until foamy.
    • Add cake mix, baking powder, cinnamon powder, cayenne pepper, chili powder, salt and mix until combined.
    • Cover and chill this mixture in the refrigerator for 20 minutes.
    • Scoop out small portions of the dough and form little balls.
    • Roll these balls in a bowl of granulated sugar.
    • Place them on a cookie tray, lined with parchment paper.
    • Bake at 350 degrees F for 10-12 minutes or until the edges are firm but center is slightly soft. Enjoy.
