*Thank you Vital Proteins for sponsoring today's post so that I could share this recipe with all of you. As always, all opinions are mine.*

I don't even remember when I first started making these bars. All I know is that I always have a batch of them in my fridge to satisfy my sweet tooth. This is one of the first few things that I also made with my own son when he was little, just to get him involved in the kitchen. These are just as simple to make as my Homemade Chocolate Bars (Dark, Milk, White) and my Chocolate Chip Cookie Dough Bars and even these Chocolate Covered Potato Chips.

    Key ingredients

    • Chocolate- The better quality, the better the treat.
    • Rice Krispies cereal- This is what brings that nice crispy crunch.
    • Peanut butter- Smooth provides the best consistency.
    • Protein powder- This is optional and can be omitted if you don't have on hand.

    Variations

    • Use a different kind of chocolate- Dark chocolate, semisweet chocolate, white chocolate.
    • Vegan version- Use vegan chocolate and omit collagen peptides.
    • Use another nut butter- Such as almond butter, pistachio butter, cashew butter, or sunflower butter. You can even omit peanut butter, altogether.
    • Other mix-in options- Try chopped nuts, shredded coconut, or finely chopped dried fruits.
    • Chop them up- And toss them on top of a bowl of ice cream for a nice crunchy topping.
    • Healthier option- Use puffed quinoa or puffed rice instead of Rice Krispies.

    4. Spread mixture- Into the molds of your choice.

    Tips and techniques

    • No need to grease the molds- Because these ingredients don't stick badly.
    • Don't try to speed up chilling process using the freezer- Because the sudden drop in temperature can cause ghastly white streaks to appear on the chocolate. Use a refrigerator instead.
    • Don't try to remove the chocolate from the mold- Until the mixture has solidified completely or else you will end up with a big sticky mess.
    • Recipe can easily be doubled- To make more candies for events and parties.

    Recipe FAQs

    How to melt chocolate?

Place in a microwave safe bowl. Using 15 second increments, melt chocolate a little at a time. Stir with a spatula between each increment.

How to remove chocolate from molds without breaking?

Be sure that the chocolate is fully set. Then gently bend the molds back and forth, tip them upside down, and gently tap until fully loosened.

What do I use for molds?

You can purchase candy bar molds from Amazon or Hobby Lobby or even Walmart. They are reasonably priced (between $3-$5) and there are many stunning designs and patterns to choose from.

    Storage

    • Make ahead- These are a great treat to make in advance. They will last up to a week in a container on the counter or in the fridge.
    • Room temperature- Place in a sealed container for up to 1 week. Beware of hot weather, as this will lead to melting.
    • Refrigerate- Store leftovers in a sealed container in the fridge for up to 1 week.
    • Freeze- Use an airtight container to keep them in for up to 1 month. Thaw before eating.
