Instead of boneless chicken breast, you can also use wings to make honey sriracha chicken wings or even make sriracha drumsticks.

Baked Honey Sriracha Chicken Bites

Ingredients
- 1 ½ cups Buttermilk
- 1 tablespoon Garlic paste Or finely chopped garlic
- ½ tsp Ginger paste Or finely chopped ginger
- 1 teaspoon Paprika
- ½ teaspoon Chili powder Or chili flakes, Optional
- 2 pounds Chicken Boneless, Cut into small cubes
- 3 tablespoon All-purpose flour
- Salt To taste
- Pepper To taste
- 4 cups Cornflakes cereal Crushed
- ½ cup Ketchup
- ½ cup Sriracha sauce
- 2 tablespoon Vinegar
- ⅔ cup Honey
- ½ teaspoon Garlic powder
- ¼ tsp Onion powder
Instructions
- In a mixing bowl, add buttermilk, garlic, ginger, salt, pepper, chicken and mix everything together.
- Cover with saran wrap and marinate for 15- 20 minutes.
- After 15-20 minutes, drain excess liquid.
- In another mixing bowl, add flour, paprika, chili powder (optional), salt, pepper.
- Dump this flour mixture into the chicken bowl and mix until all chicken pieces are coated.
- Roll each chicken piece in a bowl of crushed cornflakes and place it on a cookie tray, lined with parchment paper.
- Bake at 400 degrees for about 15 minutes.
- While the chicken is baking, prepare the honey sriracha sauce: Add ketchup, sriracha sauce, vinegar, honey, garlic powder, onion powder in a non-stick sauce pan and cook on medium heat until bubbling.
- Place the crispy baked chicken bites in a large bowl and pour as much or as little honey sriracha sauce, as you like. Toss until fully coated.
- Serve immediately and enjoy!

Notes
- Instead of baking, you can also fry the chicken pieces in oil on the stovetop (a few minutes on each side).
- Don't over-crowd the tray with too many chicken pieces because this would prevent them from becoming really crispy.
