Pretzel Brownies

These fudgy sweet and salty pretzel brownies are topped off with rich chocolate ganache. Really easy to make and it’s the perfect recipe for chocoholics!

Sweet and salty desserts are one of my many WEAKNESSES and these pretzel brownies hit the right mark when the cravings hit me in full force yesterday.

Imagine eating a slice of insanely FUDGY brownies, topped off with RICH chocolate ganache and salted pretzel bits.

For my FIRST batch of these pretzel brownies, I added some roughly chopped pretzels in the batter.

That resulted in the WEIRDEST brownies I have ever eaten.

I kept spitting out the pretzel bits coz they had gotten all soggy… GROSS!

I am not sure why I see so many popular recipes with pretzels in the batter…Totally confused by that!

So anyways, learn from my mistake and DON’T add pretzels into the brownie batter.

For my SECOND batch, I added a handful of salted walnuts and pecans into the batter and tossed come pretzel rods on top of the ganache.

These pretzel brownies were UNBELIEVABLY DELISH!

The salted nuts in the brownie batter and pretzels on top of the brownies gave these brownies a very BALANCED sweet and salty flavor.

I was planning on topping these pretzel brownies with my coconut cream chocolate frosting.

But let’s be HONEST… chocolate ganache and brownies were meant to go hand in hand 😉

pretzel brownies 3To make these sweet and salty pretzel brownies, you will need the following ingredients:

Pretzel brownies:
1/2 cup flour
1 cup granulated sugar
1/4 cup brown sugar
1/2 cup + 2 tbsp butter
3/4 cup cocoa powder
1/3 cup salted pecans and walnuts
2 eggs
1/4 tsp salt
1/4 tsp espresso powder
1 tsp vanilla extract
1/4 cup broken pretzel rods (for topping)

Chocolate ganache:
2 cups dark chocolate chips
1 cup heavy cream

Notes:
– This recipe can easily be doubled if you want to make a bigger batch. The pictures in this post show a bigger batch coz I wanted a “taller, thicker” brownie.
– The nuts that are used in this recipe must be salted.
– You can add more or less nuts, depending on your preference.

And here are the steps:

Step 1:
In a double boiler, add butter, granulated sugar, brown sugar and cocoa powder and keep mixing until everything is melted.
The mixture will be thick and a little grainy… Don’t worry!

Step 2:
Add the eggs one at a time and mix with a spatula.

Step 3:
Add the flour, salt, espresso powder and vanilla extract and mix with a spatula until you have a thick and smooth batter.

Step 4:
Fold the nuts into the batter.
The batter will be very thick.

Step 5:
Pour the batter into a greased and floured 7 or 8 inch rectangular baking pan or a pyrex dish.
You will need to use a spatula to spread the batter completely into the pan.

Step 6:
Bake at 325 degrees for 25-30 minutes or until an inserted toothpick comes out with some crumbs.

Step 7:
While the brownies are baking, prepare the chocolate ganache…
Melt the chocolate in a double boiler.
Then add heavy cream and mix until everything is smooth and creamy.

Step 8:
When the brownies come out of the oven, let them cool for 10 minutes so that they are still warm.
Then, pour the ganache on top and spread it with a spatula and toss some broken pretzel rods.

And you are done making pretzel brownies!
