    Quick and easy chocolate cake mix cookies recipe, homemade with simple ingredients. Soft and chewy, dipped in melted chocolate and covered in sprinkles. Many add-in options included.

    They chocolate cookies are firm and crispy on the outside but so soft and chewy on the inside. They are made with a cake mix but taste so good, as if they are made from scratch. I love making doctored cake mix recipes and have a huge collection of recipes on the site and they are compiled together in this Cake Mix Recipes (Desserts) post.

    How to Make Easy Chocolate Cake Mix Cookies?

    1. Mix together- Cake mix, eggs, oil, vanilla extract.
    2. Chill dough- In the refrigerator.
    3. Scoop dough- Form little balls.
    4. Place them- On a cookie tray.
    5. Bake- Until the edges are firm.
    6. Dip in melted chocolate- Do this only for half the cookie.
    7. Toss sprinkles- On top.

    Key ingredients

    Cake mix- Any flavor can be used but in this recipe, a 15.25 oz. Devil's food cake mix box is being used.

    Oil- Use a mild flavored oil such as canola, sunflower, corn.

    Eggs- They should be large and preferably at room temperature.

    Cookie Add-ins/ Mix-ins/ Toppings

    Reese's Pieces- Add ½-3/4 cup Reese's Pieces into the batter before baking.

    M&Ms- Toss in ½-3/4 cups mini or regular M&Ms instead of chocolate chips.

    Rolos- Scoop out a small portion of the cookie dough and place a Rolo in the center and wrap the dough around the candy into a ball shape and then, bake.

    Andes mints- Chop mints and add them in the batter. About ½ cup is sufficient.

    Candy canes- Bake the cookies as per my instructions. When they cool down, dip each cookie in melted white chocolate and sprinkle crushed candy canes on top.

    Powdered sugar or granulated sugar- Roll the cookie dough balls in one of these sugars prior to baking and you will end up with easy chocolate crinkles.

    Chocolate chips- Use regular sized or mini chips. They can be semisweet, dark, milk, white, peanut butter or butterscotch flavored.

    Oats- I like to use about ⅓ cup quick oats for extra chewiness.

    Shredded coconut- Shredded and sweetened is best. This enhances the chewy factor.

    Nuts- Mix in ½ cup roughly chopped nuts like peanuts, almonds, walnuts, pecans.

    Candy bars- Chop them up and mix them in the dough. You can use up to 1 cup. Try Mars bars, Twix, Reese, Kit Kat, Snickers, Almond Joy e.t.c.

    Marshmallows- Push a few mini marshmallows into each cookie as soon as you take them out of the oven and before they have a chance to cool down.

    Variations

    Substitute chocolate chips- With butterscotch chips, white chocolate chips, mint chips, or another favorite.

    Filled cookies/ cookie sandwiches- Bake the cookies as per my instructions. When, they cool down, fill them with my Best Cream Cheese Frosting. You can also spread peanut butter, Nutella or any other nut butter between two cookies.

    Pumpkin chocolate cookies- Mix together the box mix powder with 1 can pumpkin puree (15 oz) and omit everything else from my recipe below. They are super fudgy cookies and have almost a brownie-like texture.

    Try other extracts- Such as peppermint, coconut, maple, almond, mint e.t.c.

    Use another cake mix flavor- The other ingredients will remain the same. Only swap out the chocolate cake mix for yellow cake mix, strawberry cake mix, lemon cake mix e.t.c.

    Make large cookies- Instead of 24 cookies, make 12 jumbo cookies. The only thing you would need to change is the bake time which will increase by an additional 3-5 minutes.

    Tips and Techniques for Chocolate Cookies With Cake Mix

    Chill dough- For 20-30 minutes in the fridge because this makes it easier to handle and prevents the cookies from spreading while baking. Don't skip this step!

    Use baking powder- Don't replace it with baking soda because the results will be different.

    Don't replace oil with butter- Because butter will make a very dense cookie and you want these to be lighter.

    Line tray- With parchment paper so that you have an easy clean up and cookies don't stick to the tray.

    Allow cookies to cool completely- Because they will hold together better for dipping in melted chocolate.

    Why are my cookies hard? They may have been over-baked.

    Why did my cookies spread? Probably because you didn't chill the dough.

    Storage

    Room temperature- Cookies will stay fresh in a cookie jar for up to 3 days.

    Fridge- Store leftovers in a sealed container for about 5 days.

    Freezer- Place uncooked cookie dough balls in a sealed freezer bag for up to 1 month. When you are ready to enjoy them, bake according to instructions below. You can also freeze baked cookies, once they have cooled completely in a sealed freezer bag for up to 1 month.

    Ingredients
      

    • 1 box Chocolate cake mix I used Pillsbury devil’s food cake mix
    • 2 Eggs Large
    • ⅓ cup Olive oil Light
    • 1 teaspoon Baking powder
    • 1 tablespoon Vanilla extract
    • ⅓ cups Sprinkles
    • 1 cup Chocolate chips Semisweet, Melted

    Instructions
     

    • In a mixing bowl, mix together the cake mix, eggs, oil, vanilla extract and baking powder until thoroughly combined.
    • Chill this mixture in the refrigerator for 20 minutes.
    • Scoop out small portions of the dough and form little balls.
    • Place them on a cookie tray, lined with parchment paper.
    • Bake at 350 degrees for 10-12 minutes or until the edges are firm but center is slightly soft.
    • When the cookies cool down completely, dip half of each cookie in a bowl of melted chocolate and place them on a tray, lined with wax paper.
    • Toss some sprinkles before the chocolate has a chance to harden. Enjoy!
