What kind of chocolate is good for melting and dipping?
My rule of thumb is to use your favorite brand of chocolate whose flavor you like best. I recommend Hershey's chocolate, Godiva, Lindt, Nestle toll house and even generic store brands. You can use white chocolate, milk chocolate, semisweet chocolate or dark chocolate. Don't use truffles or fudge. They have to be in the form of chocolate bars or chocolate chips.
Candy melts, candy coating or almond bark are another option. They are not made from cocoa butter but are excellent for melting and dipping. They are "chocolate-like." They are made of sugar and vegetable fats that will melt as easily as chocolate. These also come pre-colored, which reduces the extra step of tinting chocolate.
How to melt chocolate for dipping pretzels?
There are many different methods of doing this. Try out all the methods and see which one you like best.
Double boiler: Fill a large pot with water and bring in to a low boil over medium-low heat. Place the bowl of chopped chocolate on top of the pot and let the chocolate melt completely. Stir regularly to avoid burning.
Microwave: Place a heat-safe bowl of chopped chocolate in the microwave and heat for 1-2 minutes. Be sure to stir the chocolate every 30 seconds until it is completely melted and smooth.
Melting pots: These can be bought online. Simply, add the chocolate into the pots, set a time and temperature, allowing the chocolate to melt completely. This also keeps it warm and prevents the chocolate from hardening or setting.
Variations
Chocolate covered pretzel rods/ pretzel sticks- These shapes are just as popular as the twists. However, there are sp many other shapes to choose from plus there are limited edition holiday shapes in grocery stores as well. You can even use stuffed or filled pretzels.
White chocolate covered pretzels- Swap out regular chocolate with white chocolate.
Add peanut butter or Nutella- Mix in either one of those with melted chocolate or use some peanut butter chips to give these treats a gourmet nutty flavor.
Add candies- Such as crushed candy bars, M&M's, Reese's Pieces, Peanut Butter Cups and any other candy you can think of.
Decoration options- Sprinkles, chopped up candy bars, roughly chopped Oreos and other cookies, shredded coconut, finely chopped nuts, mini chocolate chips. The possibilities are endless!
Add drizzles- After the chocolate has set on the pretzels, fill a piping bag with melted chocolate or colored candy melts and use scissors to cut the end. Then, drizzle it on top of the pretzels to create a beautiful abstract pattern.
Tips and Techniques
How to store chocolate covered pretzels? Can they be refrigerated? How long do they last? They can be stored in a sealed container at room temperature for up to 2 weeks and can be refrigerated too, as long as they are in sealed airtight containers. They will become soggy and taste stale, when exposed to moisture.
How far in advance can you make chocolate covered pretzels? They have a long shelf life. They can be made one day in advance or even one week in advance.
How long does it take for chocolate to harden and set? It takes about 10 minutes.
What type of pretzels to use? Pretzel twists, sticks, rods, rings or even pretzel chips will all work great. It's all up to you. As for brands, this depends on your preference. Use whatever pretzels you like. Snyders of Hanover, Utz, or Rold Gold brands will all work great
Keep a close eye on the chocolate- It can burn very quickly. Mix often and heat in increments, if using a microwave. Use low heat if you are using a double-boiler.
Reheat melted chocolate- Obviously the melted chocolate will start to harden as it sits at room temperature, making dipping difficult. Reheat in microwave for 15-20 seconds and continue dipping. Do this as often as needed. Some people also like to add a little bit of shortening to thin out the chocolate further to make it easier for dipping.
Line trays with wax paper or parchment paper- Because this prevents them from sticking to the pan and makes removal easy.
How to enjoy them? Eat them as is, for a snack. You can also use them as a topping in desserts like ice cream. Package them in a gift box for a beautiful homemade gift for parties or Christmas holidays.
Bonus tip- If you are using pretzel rods instead of twists, pour melted chocolate into a tall glass instead of a bowl and dip the rods halfway into the melted chocolate. Tap the rods against the glass to remove excess chocolate and continue with the rest of the instructions below.
Add sprinkles before chocolate sets- If it hardens, nothing will stick to it. You will have to work quickly!
