Easy Waffle Cake

This easy easy waffle cake recipe is loaded with peanut butter, syrup and fresh fruits. Great for breakfast, brunch, dessert, birthday parties or “brinner.”

As the saying goes: “Breakfast is the most important meal of the day” and what can be better than this EASY waffle cake?!?!

Plain old waffles with syrup are just so BORING  and let’s face it: I don’t do boring breakfast, especially on my little munchkin’s first day back to school.

So, I made this SIX layer waffle cake!

Each layer is loaded with cinnamon flavored peanut butter, fresh fruits and syrup, of course….LOTS of syrup!

I would have made this waffle cake even taller but it started leaning and I knew it was time to stop…LOL!

This cake was truly EPIC.

We had so much fun slicing into it and then enjoying it for a wonderful family breakfast.

Cutting into this breakfast cake almost felt like a shame since it’s so BEAUTIFUL!

I think this waffle cake would be great for MORE than just breakfast…

How about lunch, or brunch or dessert or “brinner” or birthday parties??? 😉

Honestly, it tastes so GOOD that I want to serve it all the time…hehehe.

I used Hungry Jack® Pancake & Waffle Mix, Hungry Jack® Syrup and Jif® Flavored Spread (Cinnamon) in this recipe and they were the PERFECT choice.

The pancakes were so soft and fluffy… Absolutely DELICIOUS and hearty!

And I can’t get enough of that cinnamon peanut butter… I have been SPREADING it on everything, these last few days!

It’s naturally flavored with no artificial ingredients and oh so creamy! YUM!

easy waffle cake recipe 7For this easy waffle cake recipe, you will need the following ingredients:

4 cups Hungry Jack Buttermilk pancake and waffle mix
2 1/2 cups water
1/2 cup oil
2 egg
2 cups Jif cinnamon spread
2 cups Hungry Jack syrup
1 cup sliced kiwis
1 cup grapes
1 cup sliced strawberries
1 cup blueberries

Notes:
– I used an 8 inch waffle iron.

And here are the steps:

Step 1:
In a mixing bowl, add the waffle mix, water, oil and egg.

Mix everything until there are no lumps.

Heat up your waffle iron and pour some batter.
Bake until the steaming stops and waffles are golden brown.
Make a total of 6 waffles.

Now, wash the fruits, slice them and pat them dry on a few sheets of kitchen roll.

Place one waffle on a cake stand.

Spread peanut butter on top of it.

Toss some fruits and pour a little syrup.

And place another waffle on top.

Continue to follow steps 5-8 until you reach the top  of the tower.
Then, decorate with all the remaining fruits and pour more syrup.
And you are done… Now, you know how to make waffle cake!

  • ½ cup oil
