    Easy sweetened condensed milk fudge recipe, homemade with simple ingredients in microwave. Soft, rich, creamy and bursting with dried cranberries and pistachios.

    I love good food, and I love pretty food. This candy falls into both categories, making it the best treat for Christmas and holiday parties. It is creamy, sweet, tangy, nutty, rich, and easy to make.     How to make easy sweetened condensed milk fudge recipe in microwave?

    1. Heat white chocolate chips- In microwave.
    2. Pour condensed milk- Mix.
    3. Add pistachios and cranberries- Stir.
    4. Spread mixture- In a lined pan.
    5. Cover and chill- Till set and firm.
    6. Cut pieces- With a sharp knife.

    Why is my fudge not setting? Why is it too soft?

    There are two issues that may be the culprit. The first is that the ratio of chocolate chips to condensed milk may be off, making the fudge too runny to set. Make sure to measure the ingredients accurately. The second is that the fudge just hasn't had enough time to set and become firm. Make sure to chill it in the refrigerator overnight.

    Why is my fudge grainy, dry and crumbly?

    This could be the result of a few different issues. If the chocolate is not stirred regularly during heating, or is microwaved too long, the chocolate can burn and become dry and crumbly. This can also occur because of an incorrect ratio of ingredients, or the ingredients were not mixed or dissolved properly.

    Is evaporated milk same as sweetened condensed milk?

    No, they are not the same. Evaporated milk is not sweetened, whereas condensed milk is. In this fudge recipe, it’s not interchangeable at all. The texture would be very off.

    Variations for microwave Eagle Brand fudge

    Try other nuts- Such as toasted and finely chopped walnuts, pecans, cashews, or peanuts.

    Try other dried fruits- Such as finely chopped mangoes, pineapples, cherries or apricots.

    Omit cranberries and pistachios entirely- If you prefer a smooth and creamy fudge with no add ins.

    Add a drizzle- Once set and firm, drizzle melted white chocolate or Easy Chocolate Ganache {2 Ingredients} on top of the fudge for more sweetness and elegance.

    Add shredded coconut- For more texture and sweetness.

    Add extracts- Such as vanilla, almond, maple, bourbon, or rum.

    Add zests- Such as orange, lemon, or lime.

    Add spices- Such as cinnamon, nutmeg, all spice, cardamom, or ginger. Any of those warm, fragrant spices would complement perfectly.

    Use a different kind of chocolate chip- Such as dark or milk chocolate.

    Tips and techniques for homemade Carnation fudge

    What to do if I can’t find orange infused cranberries? Simply mix in 1 teaspoon fresh orange zest, and the problem is solved.

    Must line the pan with wax paper– Because this prevents the fudge from sticking to the pan, making it possible to remove it, and then cut it into neat slices.

    Great for Christmas time- Because it is so easy to make, and requires only a few ingredients.

    No candy thermometer necessary- Because this fudge is made with sweetened condensed milk you can heat it in the microwave with no need for a candy thermometer.

    What size pan to use? Use an 8 inch square pan for thicker fudge pieces. Use 9 inch square pan for thinner or flatter fudge pieces.

    How to melt chocolate? Heat it in the microwave until the chocolate is melted and smooth. Make sure to mix with a spatula every 30 seconds to prevent the chocolate from burning.

    Where to buy orange infused cranberries? I got mine from Trader Joe's, but I am sure you can get them at other grocery stores as well during the holidays.

    Roughly chop the pistachios and cranberries- Because this allows you to get all the flavors in each bite. It also helps the fudge to solidify and hold together properly, while making it easier to cut as well.

    Storage

    Refrigerate– In a sealed container for up to 1 week.

    Freeze– Double wrap it and store in an air tight container to prevent freezer burns. It can also be stored as a whole block and then sliced after being thawed.

    Ingredients
      

    • 3 cups White chocolate chips
    • 1 can Sweetened condensed milk 14 oz. can
    • ½ cup Pistachios Rougly chopped
    • ½ cup Dried orange cranberries Rougly chopped, I get these orange infused cranberries from Trader Joe's, Can be replaced with regular dried cranberries

    Instructions
     

    • In a large mixing bowl, add white chocolate chips.
    • Heat in microwave until chocolate is melted and mixture is smooth. Make sure to mix with a spatula every 30 seconds to prevent the chocolate from burning.
    • Pour condensed milk and mix until smooth.
    • Stir in chopped pistachios and chopped cranberries until evenly distributed.
    • Spread mixture evenly in an 8 or 9 inch square pan, lined with wax paper. Use 8 inch pan for thicker fudge pieces. Use 9 inch pan for thinner/ flatter fudge pieces.
    • Cover and chill in fridge overnight to allow the mixture to set and become firm.
    • Use a sharp knife to cut small pieces. Enjoy.
