Cotton Candy Cookies (With Cake Mix)

Quick and easy cotton candy cookies recipe with cake mix. These crispy, chewy chocolate cookies are topped with buttercream icing and pink cotton candy. Great for serving at kids birthday parties!

  • Add the the cake mix powder, eggs, oil, baking powder and vanilla extract in a mixing bowl.
  • Mix everything until just combined.
  • Chill the dough for 20-30 minutes so that it's easier to handle.
  • Scoop out small portions of the cookie dough and shape them into balls.
  • Roll the cookie balls in a bowl filled with granulated sugar.
  • Place these balls on a cookie tray lined with parchment paper.
  • Flatten them slightly with the palm of your hand.
  • Bake at 350 degrees for 10-12 minutes or until the cookies are hard and crispy on the edges.
  • When the cookies have cooled down to room temperature, top off each cookie with frosting and some cotton candy. Serve immediately and enjoy!

Notes

  • Once assembled, serve immediately. Frosted cookies can be stored in a sealed container in the fridge for up to 5 days and cotton candy can be added, just prior to serving.
