Ingredients

Instructions

  • In a mixing bowl, add buttermilk, garlic, ginger, salt, pepper, chicken and mix everything together.
  • Cover with saran wrap and marinate for 15- 20 minutes.
  • After 15-20 minutes, drain excess liquid.
  • In another mixing bowl, add flour, paprika, chili powder (optional), salt, pepper.
  • Dump this flour mixture into the chicken bowl and mix until all chicken pieces are coated.
  • Roll each chicken piece in a bowl of crushed cornflakes and place it on a cookie tray, lined with parchment paper.
  • Bake at 400 degrees for about 15 minutes.
  • While the chicken is baking, prepare the honey sriracha sauce: Add ketchup, sriracha sauce, vinegar, honey, garlic powder, onion powder in a non-stick sauce pan and cook on medium heat until bubbling.
  • Place the crispy baked chicken bites in a large bowl and pour as much or as little honey sriracha sauce, as you like. Toss until fully coated.
  • Serve immediately and enjoy!

Notes

  • Instead of baking, you can also fry the chicken pieces in oil on the stovetop (a few minutes on each side).
  • Don't over-crowd the tray with too many chicken pieces because this would prevent them from becoming really crispy.
