Healthy Chocolate Truffles

This easy healthy chocolate truffles recipe requires only a few simple ingredients. They are guilt free, rich, fudgy and creamy! Perfect homemade gift too!

Ingredients

  • 1 ¼ cup Semisweet chocolate Finely chopped
  • cup Coconut milk Full Fat
  • ¼ cup Vital Proteins collagen whey Or chocolate protein powder
  • ¼ cup Add-ins E.g: cherries, nuts e.t.c

Instructions

  • In a microwave safe bowl, add coconut milk and chocolate. Heat at 30 second increments until the chocolate has started to melt. Don't overheat and burn this mixture!
  • Add collagen why and stir everything together with a spoon until there are no lumps and you have a smooth and creamy mixture.
  • Let this mixture chill in the fridge for about 2 hours or until it's firm but still fairly soft enough to mold.
  • Then, scoop out tablespoons of the mixture and shape into balls. Add a cherry or nut in the center of the ball, if you like.
  • Roll the balls in your choice of toppings (cocoa powder, sprinkles e.t.c.)
  • Place these balls in a gift box or fancy dish lined with wax paper and enjoy!

  • Make sure to use full fat coconut milk and remember to shake it well!
  • Store leftovers in the fridge and when you are ready to serve, set the plate on your countertop at room temperature for 15- 20 minutes and this will make them super creamy!
  • Eat all leftovers within 1 week.
