How to Make Easy Eggnog (No Alcohol)

In a mixing bowl, whisk together the egg yolks and sugar until smooth and creamy. Keep aside. Add heavy cream, milk, nutmeg in a nonstick saucepan and cook over medium high heat. Mix and continue stirring until mixture starts simmering. Start adding this hot milk to the egg mixture slowly (½ cup at a time), while whisking vigorously until smooth. Pour the mixture back into the saucepan and heat again, while whisking constantly until mixture thickens a bit and reaches a temperature of 160 degrees F.
Remove from heat and stir in vanilla extract. Chill. Then, serve in cups with a sprinkle of cinnamon or nutmeg and/or a swirl of whipped cream.
Optional- For a caramel version, drizzle some caramel sauce inside the sides of your cup and then pour the drink. Stir a bit and enjoy.
