Easy Chocolate Birds Nest Cookies

Quick, easy no bake birds nest cookies recipe, homemade with simple ingredients. Full of crunchy chow mein noodles, peanut butter, coconut, chocolate, butterscotch and Cadbury mini eggs.

Ingredients

  • 1 cup Chocolate chips Semisweet
  • 1 cup Butterscotch chips
  • 1.5 tablespoon Peanut butter Creamy
  • 1 tablespoon Coconut Shredded or desiccated
  • 2.5 cups Chow mein noodles These are already cooked
  • 36 Mini chocolate eggs Make sure to buy a variety of colors

Instructions

  • In a large mixing bowl, add chocolate chips, butterscotch chips, peanut butter. Heat in the microwave at 30 second intervals and mix after each interval until mixture is fully melted smooth.
  • Add coconut and chow mein noodles and mix until noodles are fully coated.
  • Drop spoonfuls of this mixture onto a baking tray, lined with wax paper.
  • Use the spoon to create an indent in the center.
  • Stick three mini chocolate eggs in this space for each cookie. I used a black and orange edible marker to draw facial details on some of the eggs. That transformed them into little chick candies.
  • Chill in the fridge until the chocolate sets and the cookies become firm. Enjoy!

Notes

  • If the eggs are not sticking securely, you may have to stick them with a little bit of  melted chocolate. It works like glue. 
  • Drawing details on the chocolate eggs is optional.
  • Edible markers can easily be found online or in the baking and cake decorating aisles of many grocery stores.
  • Add extracts for a different flavor profile.
  • Add roughly chopped nuts for additional crunch.

  • Make sure your tray is lined with wax paper or parchment paper to prevent cookies from sticking to pan. 
  • Leftovers can be stored in a sealed container at room temperature for 2 days or in the refrigerator for 5 days.
