These brownie-like Rolo chocolate cookies are crispy on the outside but soft and fudgy on the inside. Really easy to make and great for gift giving too!

  • cups All-purpose flour
  • ¾ cups Cocoa powder
  • 1 cup Granulated sugar
  • 1 cup Brown sugar
  • 1 cup Butter Unsalted
  • 2 Eggs Large
  • 1 tbsp Vanilla extract
  • 1 tsp Baking soda
  • 35 Rolo candies
  • 1 cup Sprinkles Or sugar for rolling the cookies


  1. In a mixing bowl, add granulated sugar, brown sugar and butter. Cream everything until the mixture is light and fluffy.
  2. Add eggs and vanilla extract. Mix again.
  3. In a separate bowl, add flour, cocoa powder and baking soda. Mix everything with a wooden spoon.
  4. Add the dry mixture into the wet mixture. Mix until just combined.
  5. Chill the dough for 45 minutes so that it’s easier to handle.
  6. Scoop out about 1 tablespoon of the dough and mold it around a Rolo candy into the shape of a ball.
  7. Roll the ball in a bowl of sprinkles or sugar and press gently to flatten it a little.
  8. Place these cookies on a cookie tray lined with parchment paper.
  9. Bake at 375 degrees for 10 minutes. Enjoy!
