Ingredients

Instructions

  • In a deep saucepan, add 2 cups milk, cocoa powder, espresso powder and sugar.
  • Cook on medium heat and keep stirring everything together.
  • In a separate bowl, add 1 cup milk and cornstarch. Mix everything together until there are no lumps.

  • Bring the pudding to a very light boil and remove from heat.
  • Add the vanilla extract and gently stir it into the pudding.
  • Pour this pudding into ramekins or small bowls and chill for about 2 hours in the fridge.
  • Prior to serving, toss some peppermint chips on top of the pudding.

Notes

  • Add 1.5 tablespoon espresso powder if you want a stronger coffee flavor.
  • You need to keep mixing this pudding while it’s cooking or else you will end up with little lumps.
