Mocha Peppermint Pudding
This rich and creamy mocha peppermint pudding is made with both, espresso and cocoa powder. Super easy to make and the perfect dessert for Christmas!

Ingredients
3
cups
Whole milk
¾
cup
Sugar
¼
cup
Cocoa powder

Egg yolks
lightly beaten

Cornstarch

Espresso powder

teaspoon
Vanilla extract

Peppermint chips
Instructions
In a deep
saucepan
, add 2 cups milk,
cocoa powder
,
espresso powder
and sugar.
Cook on medium heat and keep stirring everything together.
In a separate bowl, add 1 cup milk and cornstarch. Mix everything together until there are no lumps.
Pour this cornstarch milk into your saucepan. Keep mixing with a spoon until your mixture becomes thick.
Now, reduce the heat to low and add the lightly beaten egg yolks. Stir until everything is thoroughly combined.
Bring the pudding to a very light boil and remove from heat.
Add the
vanilla extract
and gently stir it into the pudding.
Pour this pudding into ramekins or small bowls and chill for about 2 hours in the fridge.
Prior to serving, toss some peppermint chips on top of the pudding.
Notes
Add 1.5 tablespoon espresso powder if you want a stronger coffee flavor.
You need to keep mixing this pudding while it’s cooking or else you will end up with little lumps.
