Sweet Potato Bread

Easy sweet potato bread recipe, homemade with simple ingredients. Super moist and tender quick bread, loaded with canned sweet potatoes and chai spices.

Ingredients

  • 1 can Sweet potatoes 15 oz. can, Drained into a bowl
  • ¼ cup Sweet potato juice Reserved from canned sweet potatoes
  • 2 Eggs Large
  • cup Oil
  • cup Water
  • 1 ¼ cup Granulated sugar
  • 1.5 teaspoon Chai spice Can be replaced with a combination of ground cinnamon, allspice and nutmeg OR can also be replaced with pumpkin pie spice
  • ¼ teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1 ¾ cups All-purpose flour

Instructions

  • In a large mixing bowl, add sweet potatoes, sweet potato juice and mash with a fork or potato masher until smooth.
  • Add eggs, oil, water, sugar and mix until combined.
  • Add chai spice, baking powder, baking soda, flour and mix until just combined. Sometimes, I add a very small amount of orange food coloring to make this bread more vibrant but this is optional.
  • Pour batter in a greased and floured large loaf pan (Dimensions: 9x5) and spread evenly with a spatula. Instead of greasing and flouring the pan, some people like to line the pan with parchment paper.
  • Bake at 350 degrees F for 60-70 minutes or until an inserted toothpick in the center comes out clean.
  • Remove from oven and let it cool completely at room temperature.
  • Then, use a sharp knife to cut slices. Enjoy!

Notes

  • ½ cup add-ins could be added such as mini chocolate chips or chopped pecans or walnuts. 
  • Leftovers can be stored in a sealed container in the fridge for up to 5 days.
