Ingredients

  • 1/2 cup Butter Unsalted, Room temperature
  • 1/2 cup Brown sugar
  • 1/4 cup Granulated sugar
  • 1 Egg Large
  • 1 tbsp Molasses Or honey Or maple syrup
  • 2 tsp Vanilla extract
  • 1 cup All-purpose flour
  • 1.5 cups Oatmeal Old-fashioned, Not quick oats
  • 1 tsp Cinnamon powder
  • 1/4 tsp Nutmeg powder
  • 1/2 tsp Baking soda
  • 3/4 cup Raisins

Instructions

  1. In a large mixing bowl, cream together butter, brown sugar, granulated sugar until light and fluffy.

  2. Add egg, molasses, vanilla extract and mix until combined.

  3. Add flour, oatmeal cinnamon powder, nutmeg powder, baking soda and mix until just combined.

  4. Stir in the raisins. The dough will be quite sticky.

  5. Chill cookie dough in fridge for 30-40 minutes so that it's easier to handle.

  6. Scoop out small portions of the dough and roll into balls.

  7. Place cookie dough balls on a baking tray, lined with parchment paper.

  8. Bake at 350 degrees F for 10-12 minutes or until edges are firm and golden brown but centers are still slightly soft.

  9. Remove from oven and let them cool completely in the tray and then, enjoy!
